Multigrain Seeded Bread (1 Large Loaf)

Ingredients

Dry Ingredients

  • 3 cups (360 g) bread flour
  • 1 cup (120 g) whole wheat flour
  • ½ cup (45 g) rolled oats, plus extra for topping

  • 1½ cups (360 ml) warm milk (105–110°F / 40–43°C)
  • 2 tbsp olive oil or melted butter

Instructions

Step 1: Mix

  1. Combine flour, whole wheat flour, oats, flaxseed, sunflower seeds, sesame seeds, yeast, sugar, and salt.
  2. Add warm milk and oil.
  3. Stir until a shaggy dough forms.

Step 2: Knead

  • Knead by hand for 10–12 minutes.
  • Or use a stand mixer for 8 minutes.

The dough should be:

  • Soft
  • Slightly tacky
  • Smooth and elastic

If sticky, add flour 1 tablespoon at a time.


Step 3: First Rise

  • Place dough in a lightly oiled bowl.
  • Cover.
  • Rise 60–90 minutes until doubled.

Step 4: Shape

  • Punch down gently.
