Cheesy Vegetable Patties

Ingredients

  • 2 cups finely shredded cabbage (about 150 g)
  • 1 cup grated carrot (100 g)
  • 1 cup finely chopped green beans or spring onions (100 g)
  • 1 cup shredded mozzarella or cheddar cheese (100 g)
  • 2 large eggs
  • ¾ cup breadcrumbs (or oat flour for a gluten-free option)
  • 2 tablespoons all-purpose flour or cornstarch
  • 2 cloves garlic, minced
  • ½ teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon paprika (optional)
  • ½ teaspoon dried oregano or Italian seasoning
  • 2 tablespoons chopped parsley (optional)
  • 2–3 tablespoons oil for pan-frying

Instructions

Step 1: Prepare the vegetables

  • Finely shred the cabbage.
  • Grate the carrots.
  • Finely chop the green beans.
  • If the vegetables are very wet, squeeze out excess moisture using a clean kitchen towel.

Step 2: Make the mixture

In a large bowl, combine:

  • Cabbage
  • Carrots
  • Green beans
  • Cheese
  • Garlic
  • Salt
  • Pepper
  • Paprika
  • Herbs

Mix well.

Step 3: Add binders

  • Flour
  • Breadcrumbs
