Instructions
Step 1: Roast the Tomatoes
Preheat the oven to 400°F (200°C).
Toss the cherry tomatoes with olive oil, Italian seasoning, salt, and pepper.
Spread on a baking sheet.
Roast for 18–20 minutes, until softened and lightly caramelized.
Step 2: Prepare the Meatballs
In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan, garlic, parsley, Italian seasoning, onion powder, salt, and pepper.
Mix gently until just combined.
Shape into 18–20 meatballs.
Heat olive oil in a large skillet over medium heat.
Brown the meatballs for 6–8 minutes, turning occasionally. They don’t need to be fully cooked yet.
Step 3: Cook the Rigatoni
Bring a large pot of salted water to a boil.
Cook the rigatoni until al dente according to the package directions.
Reserve ½ cup of pasta water before draining.
Step 4: Make the Sauce
In the same skillet, melt the butter.
Add the garlic and cook for 30 seconds.
Stir in the flour and cook for 1 minute.
Slowly whisk in the chicken broth and heavy cream.
Simmer for 3–4 minutes until slightly thickened.
Stir in the Parmesan cheese until melted.
Add the Italian seasoning and crushed red pepper flakes.
Fold in the spinach and cook until wilted.
Step 5: Combine Everything
Add the browned meatballs to the sauce and simmer for 8–10 minutes, until cooked through (internal temperature of 160°F (71°C) for beef).
Add the cooked rigatoni and roasted tomatoes.
Toss gently until everything is coated in the sauce.
Add reserved pasta water if needed to loosen the sauce.
Step 6: Serve
Top with fresh basil or parsley, extra Parmesan, and freshly cracked black pepper. Serve with garlic bread or a crisp green salad.

Frequently Asked Questions (FAQs)
1. Can I use frozen meatballs?
Yes. Fully cooked frozen meatballs work well—simply heat them through in the sauce.
2. Can I substitute another pasta?
Absolutely. Penne, ziti, fusilli, or farfalle are excellent alternatives.
3. Can I make this recipe ahead of time?
Yes. Prepare the meatballs and sauce a day in advance, then cook the pasta fresh before serving.
4. Can I use turkey or chicken instead of beef?
Yes. Ground turkey or chicken makes a lighter version. Cook to an internal temperature of 165°F (74°C).
5. Can I make it gluten-free?
Yes. Use gluten-free rigatoni and gluten-free breadcrumbs.
6. What other cheeses can I use?
Mozzarella, Pecorino Romano, Asiago, or Gruyère all pair well with this dish.
7. Can I make it spicy?
Yes. Increase the crushed red pepper flakes or add a pinch of cayenne pepper.
8. Why is my sauce too thick?
Stir in a little reserved pasta water, chicken broth, or cream until it reaches your desired consistency.
9. What sides go well with this pasta?
Garlic bread, Caesar salad, roasted broccoli, asparagus, or sautéed green beans make excellent accompaniments.
10. Can I freeze the entire dish?
The pasta may soften after freezing, so for the best texture, freeze only the meatballs and sauce, then prepare fresh rigatoni when serving.
