Soft Stuffed Skillet Flatbreads

Yield: 8 flatbreads

Ingredients

For the Dough

  • 4 cups (500 g) all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1¼ cups (300 ml) warm milk
  • ¼ cup (60 ml) warm water (more if needed)
  • 3 tablespoons vegetable oil or melted butter

Cheese Filling

  • 2 cups shredded mozzarella
  • 1 cup crumbled feta
  • 2 tablespoons chopped parsley (optional)

OR Potato Filling

  • 3 medium potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon butter

Instructions

Step 1: Make the Dough

  1. Mix flour, sugar, salt, and yeast.
  2. Add warm milk, water, and oil.
  3. Knead for 8–10 minutes until smooth.
  4. Cover and let rise for 1 hour until doubled.

Step 2: Prepare Filling

Mix all filling ingredients until evenly combined.

Step 3: Shape

  1. Divide dough into 8 equal balls.
  2. Flatten each into a small circle.
  3. Place 2–3 tablespoons filling in the center.
  4. Pinch edges closed.
  5. Gently flatten into a 5–6 inch (13–15 cm) round.

Step 4: Cook

  1. Heat a nonstick skillet or griddle over medium-low heat.
  2. Cook each flatbread for 4–5 minutes per side.
  3. Flip several times until golden brown and cooked through.
  4. Brush with melted butter after cooking.

Serve warm.
