Ingredients
- 4 medium zucchini, sliced or cut into half-moons
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ½ cup sour cream
- ½ cup heavy cream
- 2 large eggs
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Italian seasoning
- ¼ tsp paprika
- 2 tbsp grated Parmesan (optional)
- 1 tbsp butter or olive oil for the baking dish
- Fresh parsley, for garnish
 Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with butter or olive oil.
- Slice the zucchini into bite-size pieces. If very watery, lightly salt them and let sit for 10 minutes, then pat dry.
- In a bowl, whisk together sour cream, heavy cream, eggs, garlic, salt, pepper, Italian seasoning, and paprika.
- Add the zucchini and ½ cup cheddar + ¼ cup mozzarella. Mix gently until coated.
- Transfer to the prepared baking dish and spread evenly.
- Sprinkle the remaining cheddar and mozzarella over the top. Add Parmesan if using.
- Bake uncovered for 30–35 minutes, until the zucchini is tender and the cheese is golden and bubbling.
- For a darker, crispier top, broil for 1–2 minutes while watching carefully.
- Rest for 5–10 minutes, then garnish with parsley and serve.

- Don’t overcook the zucchini or the casserole can become watery.
- For extra flavor, add cooked bacon, diced onion, or red pepper flakes.
- For a firmer casserole, squeeze excess moisture from the zucchini before mixing.
