Ingredients

  • 2 medium zucchini
  • 1 large egg, beaten
  • ½ cup almond flour
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Cooking spray or 1 tbsp olive oil

For the Dip

  • ½ cup ranch dressing or Greek yogurt
  • 1 tbsp chopped parsley
  • ½ tsp garlic powder
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash the zucchini and cut into evenly sized fries.
  3. Pat the zucchini dry with paper towels. This helps the coating become crisp.
  4. Place beaten egg in one bowl.
  5. In another bowl, combine almond flour, breadcrumbs, Parmesan, garlic powder, Italian seasoning, onion powder, paprika, salt, and pepper.
  6. Dip each zucchini stick into the egg, allowing excess to drip off.
  7. Press into the coating mixture until completely covered.
  8. Arrange in a single layer on the baking sheet. Don’t overcrowd them.
  9. Lightly spray or brush with oil.
  10. Bake for 10–12 minutes, carefully turn the fries, then bake another 10–13 minutes until golden and crispy.
  11. For extra browning, broil for 1–2 minutes, watching closely.
  12. Mix the dip ingredients and serve immediately while the zucchini fries are hot and crisp.

 Q&A

Q: How do I make them extra crispy?
A: Pat the zucchini very dry, avoid overcrowding, and lightly spray the coating with oil before baking.

Q: Can I air-fry them?
A: Yes. Air-fry at 400°F (200°C) for about 10–14 minutes, turning halfway.

Q: Can I make them without almond flour?
A: Yes. Use extra breadcrumbs or crushed cornflakes for a nut-free version.

Q: Why are my zucchini fries soggy?
A: Zucchini contains a lot of water. Drying the sticks well and leaving space between them helps significantly.

Q: Can I prepare them ahead?
A: You can bread them several hours ahead and refrigerate them uncovered until ready to bake.
