Ingredients
Salad
- 4 cups frozen green peas, thawed
- 6 slices bacon, cooked crispy and crumbled
- ½ cup red onion, finely diced
- ¾ cup shredded cheddar cheese
- 3 hard-boiled eggs, chopped
- ¼ cup fresh parsley, chopped
- 2 tbsp sunflower seeds (optional)
Creamy Dressing
- ½ cup mayonnaise
- ½ cup sour cream
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- 1 tsp sugar or honey
- ½ tsp garlic powder
- ¼ tsp black pepper
- ¼ tsp salt
 Instructions
- Prepare the peas: Thaw the peas and drain well. Pat them dry so the salad doesn’t become watery.
- Make the dressing: Whisk mayonnaise, sour cream, Dijon mustard, vinegar, sugar, garlic powder, salt, and black pepper until smooth.
- Combine: In a large bowl, add peas, bacon, red onion, cheddar, eggs, and parsley.
- Dress: Pour the creamy dressing over everything and gently fold until evenly coated.
- Chill: Cover and refrigerate for at least 1 hour to let the flavors blend.
- Finish: Before serving, gently stir and top with extra bacon, cheddar, parsley, and green onion if desired.
 Tips
- Use frozen peas rather than canned for better color and texture.
- Make sure peas are completely drained.
- Add bacon just before serving if you want it extra crispy.
- For a lighter version, replace half the mayonnaise with Greek yogurt.
- Best eaten within 2–3 days, refrigerated.
