Instructions
Step 1: Roast the Vegetables
- Preheat the oven to 425°F (220°C).
- Arrange tomatoes and onion on a baking sheet.
- Place the garlic bulb on the tray.
- Drizzle everything with olive oil.
- Sprinkle with salt, pepper, oregano, and thyme.
- Roast for 35–40 minutes, until the tomatoes are softened and lightly caramelized.
Step 2: Prepare the Garlic
- Remove the tray from the oven.
- Let the garlic cool slightly.
- Squeeze the roasted garlic cloves out of their skins.
Step 3: Build the Soup
- In a large pot, melt the butter (if using).

- Add the roasted tomatoes, onions, roasted garlic, broth, basil, and smoked paprika.
- Simmer for 10 minutes.
Step 4: Blend

Step 5: Finish
- Stir in the heavy cream (if using).
- Taste and adjust seasoning with salt, pepper, or sugar if needed.
- Simmer for another 2–3 minutes.
Step 6: Serve
Ladle into bowls and garnish with basil, Parmesan, croutons, a drizzle of cream, or olive oil. Serve hot with grilled cheese or crusty bread.
