 Ingredients

  • 1 (3 oz / 85 g) package orange gelatin (Jell-O)
  • 1 cup boiling water
  • ½ cup cold water
  • 1 (3.4 oz / 96 g) package instant vanilla pudding mix
  • 1 (8 oz / 225 g) container whipped topping, thawed
  • 1 (15 oz / 425 g) can mandarin oranges, drained well
  • 1 cup mini marshmallows
  • 1 cup cottage cheese (optional)
  • ½ cup vanilla yogurt or sour cream (optional)
  • ½ teaspoon vanilla extract
  • 1 teaspoon orange zest (optional)

 Instructions

Step 1

In a large bowl, dissolve the orange gelatin in the boiling water, stirring for about 2 minutes until completely dissolved.

Step 2

Add the cold water and let the mixture cool for about 10 minutes.

Step 3

Whisk in the instant vanilla pudding mix until smooth and slightly thickened.

Step 4

Fold in the whipped topping, cottage cheese (if using), yogurt or sour cream, and vanilla extract until well combined.

Step 5

Gently fold in the drained mandarin oranges, mini marshmallows, and orange zest.

Step 6

Cover and refrigerate for 1–2 hours, or until chilled and fluffy.

Step 7

Serve cold and enjoy!
