Instructions
- Cook the beef: Heat oil in a skillet over medium-high heat. Add onion and jalapeño and cook for 2–3 minutes.

- Drain excess fat if needed. Stir in chili powder, cumin, paprika, salt, pepper, and water. Simmer for 2 minutes.

- Add another layer of chips, remaining beef, and remaining cheese.
- Bake at 400°F (200°C) for 5–8 minutes, until the cheese is melted and bubbly.
- Top with salsa, guacamole, sour cream, and diced red onion.
- Garnish with jalapeños and cilantro and serve immediately with lime.
