Cheesy Rice & Pea Bake Loaf

 Ingredients

  • 3 cups cooked white rice, cooled
  • 1 cup frozen peas, thawed
  • 1½ cups shredded cheddar cheese, divided
  • 3 large eggs
  • ½ cup milk
  • ½ cup sour cream or plain Greek yogurt
  • ½ cup grated Parmesan cheese
  • ¼ cup finely chopped onion
  • 2 tbsp chopped fresh parsley or green onions
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp Italian seasoning
  • 1 tbsp melted butter or olive oil
  • Optional: ¼ tsp paprika for the top

 Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9 × 5-inch loaf pan and line it with parchment paper, leaving some paper over the sides for easy removal.
  3. In a large bowl, whisk together the eggs, milk, sour cream, garlic powder, salt, pepper, and Italian seasoning.
  4. Add the cooked rice, peas, onion, Parmesan, parsley, and 1 cup of cheddar.
  5. Gently mix until everything is evenly combined. Avoid crushing the peas.
  6. Spoon the mixture into the prepared loaf pan and press it down gently so there are no large gaps.
  7. Sprinkle the remaining ½ cup cheddar over the top. Add a little paprika if desired.
  8. Drizzle lightly with melted butter or olive oil.
  9. Bake for 35–45 minutes, until the top is golden brown and the center is set.
  10. Let it rest for 10–15 minutes before removing it from the pan.
  11. Carefully lift it out using the parchment paper and slice with a sharp knife.
  12. Serve warm.
