Ingredients

Honey Lime Chicken

  • 500 g boneless chicken breast or thighs
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Strawberry Rice

  • 2 cups cooked jasmine or white rice
  • 1 cup fresh strawberries, finely diced
  • 1 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tbsp chopped fresh mint
  • Pinch of salt

Garnish

  • Fresh strawberry slices
  • Lime wedges
  • Fresh mint
  • Sesame seeds, optional

 Method

1. Prepare the marinade
In a bowl, combine honey, lime juice, olive oil, garlic, paprika, chili powder, oregano, salt and black pepper.

2. Marinate the chicken
Add the chicken and coat thoroughly. Cover and refrigerate for 15–30 minutes.

3. Cook the chicken
Heat a skillet over medium heat. Add the chicken and cook for approximately 5–7 minutes per side, depending on thickness. Cook until the center reaches 165°F / 74°C.

Let the chicken rest for 5 minutes, then slice.

4. Prepare the strawberry rice
Add cooked rice to a bowl. Gently fold in diced strawberries, lime juice, honey, mint and a pinch of salt. Avoid mixing too aggressively because the strawberries can become mushy.

5. Build the rice stack
Place a round food ring or small bowl on a plate. Fill with strawberry rice and gently press it down. Add sliced chicken on top, then carefully remove the mold.

6. Garnish
Add strawberry slices, fresh mint and a lime wedge. Drizzle with a little pan juice if desired.
