Ingredients

Vegetables

  • 2 medium zucchini
  • 2 medium yellow squash
  • 1 large eggplant

Sauce Base

  • 2 tbsp olive oil

3. Assemble

  • Pack them tightly in a spiral or rows over the sauce.

4. Season

  • Drizzle olive oil over top.
  • Sprinkle herbs, salt, pepper, and Parmesan.

5. Bake

  • Cover with foil or parchment.
  • Bake at 375°F (190°C) for 35 minutes.
  • Uncover and bake another 20–25 minutes until tender and slightly caramelized.

6. Garnish & Serve
