For the chicken
- 2 large boneless, skinless chicken breasts
- 1½ tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp paprika

Simple dressing
- 3 tbsp olive oil
- 1½ tbsp lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove, minced
- ½ tsp dried oregano

- Marinate chicken: Mix olive oil, lemon juice, garlic, paprika, oregano, pepper, salt, and onion powder. Coat the chicken and let it marinate for 20–30 minutes.
- Cook: Heat a grill pan or skillet over medium-high heat. Cook chicken for about 5–7 minutes per side, depending on thickness, until the thickest part reaches 165°F/74°C.
- Rest the chicken for 5 minutes, then slice.
- Make salad: Combine lettuce, cucumber, tomatoes, red onion, and parsley in a large bowl.
- Make dressing: Whisk all dressing ingredients together.
- Toss the salad with the dressing.
- Top with sliced grilled chicken and serve immediately.
