Ingredients
- 3 lb (1.4 kg) boneless, skinless chicken breasts
- 4–5 green onions, finely sliced
- 1½ cups mayonnaise
- ½ cup sour cream or plain Greek yogurt
- 2 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- ½ tsp dried dill
- ½ tsp black pepper
- ¾ tsp salt, or to taste
- 1–2 tbsp chicken broth, if needed for consistency
Optional
- ½ cup finely chopped celery for crunch
- ½ cup chopped grapes for sweetness
- ½ cup chopped pecans or walnuts for crunch
Instructions
- Cook the chicken: Place chicken breasts in a pot and cover with water or chicken broth. Bring to a gentle simmer and cook until the internal temperature reaches 165°F (74°C).
- Remove the chicken and let it cool completely.
- Shred the chicken finely using two forks, a hand mixer, or a food processor with short pulses. The finely shredded texture will give it the appearance shown in the picture.
- In a large bowl, whisk together mayonnaise, sour cream/Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, parsley, dill, salt, and pepper.
- Add the shredded chicken and sliced green onions.
- Mix thoroughly until creamy and evenly coated. Add a little chicken broth if it is too thick.
- Cover and refrigerate for at least 1 hour so the flavors develop.
- Stir before serving and adjust salt, pepper, or lemon juice to taste.
- Portion into airtight containers for meal prep.
