- 6 cups zucchini, sliced or chopped

- 3 cups cooked rice
- 1 box (6 oz / 170g) stuffing mix
- 1 can (10.5 oz) cream of chicken or cream of mushroom soup
- ½ cup sour cream
- ½ cup milk
- 1 cup shredded cheddar cheese
- 2 tbsp butter, melted
- 1 tsp garlic powder
- ½ tsp black pepper
- Salt, to taste
- 1 tsp dried parsley or Italian seasoning
 Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish.
- In a large bowl, combine the zucchini, chopped onion, shredded carrots, and cooked rice.
- Add the cream soup, sour cream, milk, garlic powder, pepper, and herbs. Mix well.
- Stir in half of the shredded cheese.
- Transfer the mixture to the prepared baking dish.
- Sprinkle the stuffing mix evenly over the top.
- Drizzle the melted butter over the stuffing.
- Cover with foil and bake for 25 minutes.
- Remove the foil, sprinkle the remaining cheese on top, and bake for another 10–15 minutes, until golden and bubbly.
- Let it rest for 5 minutes, then serve warm.
