 Ingredients — Serves 4

Salad

  • 3 medium beets, cooked and cubed
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 4 oz (115 g) feta cheese, cubed or crumbled
  • ¼ cup fresh parsley, chopped
  • 2 tbsp red onion, finely diced
  • 1 tbsp pumpkin seeds or sunflower seeds — optional
  • Salt and black pepper, to taste

Lemon Dressing

  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 small garlic clove, minced
  • ½ tsp dried oregano
  • Pinch of salt and black pepper

 Instructions

  1. Prepare the beets: If using raw beets, wrap them in foil and roast at 400°F (200°C) for 45–60 minutes, until fork-tender. Cool, peel, and cut into cubes.
  2. Prepare chickpeas: Drain and rinse the chickpeas thoroughly.
  3. Make dressing: Whisk olive oil, lemon juice, Dijon mustard, honey, garlic, oregano, salt, and pepper until well combined.
  4. Combine: Add beets, chickpeas, red onion, and parsley to a large bowl.
  5. Dress: Pour the dressing over the salad and gently toss so the beets don’t get mashed.
  6. Add feta: Fold in the feta cubes.
  7. Finish: Sprinkle with pumpkin or sunflower seeds if using. Chill for 15–20 minutes before serving for the best flavor.
