Ingredients — Serves 4
Salad
- 3 medium beets, cooked and cubed
- 1 can (15 oz / 425 g) chickpeas, drained and rinsed
- 4 oz (115 g) feta cheese, cubed or crumbled
- ¼ cup fresh parsley, chopped
- 2 tbsp red onion, finely diced
- 1 tbsp pumpkin seeds or sunflower seeds — optional
- Salt and black pepper, to taste
Lemon Dressing
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1 small garlic clove, minced
- ½ tsp dried oregano
- Pinch of salt and black pepper
 Instructions
- Prepare the beets: If using raw beets, wrap them in foil and roast at 400°F (200°C) for 45–60 minutes, until fork-tender. Cool, peel, and cut into cubes.
- Prepare chickpeas: Drain and rinse the chickpeas thoroughly.
- Make dressing: Whisk olive oil, lemon juice, Dijon mustard, honey, garlic, oregano, salt, and pepper until well combined.
- Combine: Add beets, chickpeas, red onion, and parsley to a large bowl.
- Dress: Pour the dressing over the salad and gently toss so the beets don’t get mashed.
- Add feta: Fold in the feta cubes.
- Finish: Sprinkle with pumpkin or sunflower seeds if using. Chill for 15–20 minutes before serving for the best flavor.
