 Ingredients — 4 servings
Chicken
- 1½ lb (680 g) boneless, skinless chicken breasts
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 3 garlic cloves, minced
- 1½ tsp dried oregano
- 1 tsp paprika
- 1 tsp dried parsley
- ½ tsp cumin
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp chili flakes, optional
Herbed Rice
- 1½ cups long-grain white rice
- 2¼ cups chicken broth or water
- 1 tbsp olive oil
- ½ tsp salt
- 2 tbsp chopped fresh parsley
- 1 tbsp lemon juice
Greek Salad
- 1 large cucumber, diced
- 1½ cups cherry tomatoes, halved
- ½ small red onion, finely diced
- ½ cup Kalamata olives
- 5 oz (140 g) feta cheese, cubed or crumbled
- 2 tbsp fresh parsley or dill
Greek Dressing
- 3 tbsp extra-virgin olive oil
- 2 tbsp lemon juice
- 1 tbsp red-wine vinegar
- 1 tsp dried oregano
- ½ tsp Dijon mustard
- 1 small garlic clove, minced
- ¼ tsp salt
- ¼ tsp black pepper
 Instructions
1. Marinate the chicken
Whisk together olive oil, lemon juice, garlic, oregano, paprika, parsley, cumin, salt, pepper, and chili flakes.
Place chicken in the marinade and coat well. Cover and refrigerate for 30 minutes to 4 hours. Don’t marinate indefinitely because the lemon can affect the texture.
2. Cook the rice
Rinse rice until the water runs mostly clear. Add rice, broth, olive oil, and salt to a saucepan.
Bring to a boil, then reduce to low, cover, and cook for 15–18 minutes. Turn off the heat and let it rest, covered, for 5–10 minutes.
Fluff with a fork and mix in parsley and lemon juice.
3. Make the Greek salad
Combine cucumber, tomatoes, red onion, Kalamata olives, and feta.
Whisk all dressing ingredients together and toss gently with the vegetables. Keep some feta aside for topping if you want the presentation shown in the photo.
4. Grill the chicken
Heat a grill, grill pan, or heavy skillet over medium-high heat.
Remove chicken from the marinade and cook for approximately 5–7 minutes per side, depending on thickness.
The safest way to check doneness is with a thermometer: chicken should reach 165°F / 74°C internally.
Rest the chicken for 5 minutes, then slice into strips.
5. Build the bowls
For each bowl:
- Add about ¾–1 cup cooked rice.
- Arrange ¼ of the sliced chicken over the rice.
- Add a generous portion of Greek salad.
- Add extra feta and Kalamata olives.
- Sprinkle with parsley or dill.
- Finish with a squeeze of fresh lemon and a small drizzle of olive oil.
