 Instructions
- Prepare the scallops: Pat scallops very dry with paper towels. Remove the small side muscle if attached.
- Season both sides with salt, black pepper, and paprika.
- Sear: Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.
- When the pan is very hot, place scallops in a single layer without crowding.
- Cook for 2–3 minutes on the first side until deeply golden brown.
- Flip and cook another 1½–2 minutes until just cooked through. Transfer to a plate.
- Make the sauce: Reduce heat to medium. Add 3 tbsp butter and minced garlic to the same skillet. Cook for about 30–60 seconds.
- Pour in the broth and scrape up the browned bits from the bottom of the pan.
- Simmer for 2 minutes.
- Add heavy cream and red pepper flakes. Simmer gently for 3–5 minutes, stirring occasionally.
- Lower the heat and stir in Parmesan until smooth and creamy.
- Add lemon juice, lemon zest, parsley, and basil. Taste and adjust seasoning.
- Finish: Return the seared scallops to the sauce and spoon the sauce over them.
- Warm together for about 1 minute—avoid overcooking the scallops.
- Garnish with fresh parsley and lemon wedges. Serve immediately.
