 Ingredients

For the cabbage:

  • 1 large green cabbage
  • 2½ tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

For the topping:

  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tbsp finely chopped red bell pepper
  • 1 tbsp chopped fresh parsley

Optional sauce:

  • 3 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • Pinch of paprika

 Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice the cabbage into thick steaks, about 1–1½ inches thick. Keep the core attached so the slices hold together.
  3. Arrange the cabbage steaks on the baking sheet.
  4. Mix olive oil, garlic powder, paprika, Italian seasoning, onion powder, salt, and pepper.
  5. Brush both sides of each cabbage steak generously with the seasoning mixture.
  6. Roast for 15 minutes.
  7. Carefully flip the cabbage and roast another 8–10 minutes, until tender and browned around the edges.
  8. Sprinkle each steak with mozzarella, Parmesan, and chopped red pepper.
  9. Return to the oven for 3–5 minutes, until the cheese is melted and lightly golden.
  10. Garnish with fresh parsley and serve hot.
