 Ingredients

For the chicken

  • 2 large boneless, skinless chicken breasts
  • 1½ tbsp olive oil

  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced

Simple dressing

  • 3 tbsp olive oil
  • 1½ tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • ½ tsp dried oregano

  1. Marinate chicken: Mix olive oil, lemon juice, garlic, paprika, oregano, pepper, salt, and onion powder. Coat the chicken and let it marinate for 20–30 minutes.
  2. Cook: Heat a grill pan or skillet over medium-high heat. Cook chicken for about 5–7 minutes per side, depending on thickness, until the thickest part reaches 165°F/74°C.
  3. Rest the chicken for 5 minutes, then slice.
  4. Make salad: Combine lettuce, cucumber, tomatoes, red onion, and parsley in a large bowl.
  5. Make dressing: Whisk all dressing ingredients together.
  6. Toss the salad with the dressing.
  7. Top with sliced grilled chicken and serve immediately.
