Ingredients

For the zucchini bites:

  • 3 medium zucchini, grated
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • 1 large egg
  • ¾ cup breadcrumbs or panko
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

  • ½ cup mozzarella, cut into small cubes

Creamy Cheese Dip

  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup shredded cheddar
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • Salt and pepper to taste
  • 1 tbsp chopped parsley

 Method

  1. Grate the zucchini and sprinkle with a little salt. Leave for 10 minutes.

  8. For extra browning, broil for 1–2 minutes at the end.
  9. Mix all dip ingredients together and serve alongside the hot zucchini bites.
  10. Garnish with extra fresh dill or parsley.

Air fry at 375°F (190°C) for 12–15 minutes, turning halfway through. Cook in batches so the bites aren’t crowded.
