Makes: 12 taco cups
Course: Appetizer / Lunch / Dinner
Cuisine: Mexican-inspired
Difficulty: Easy
Ingredients
For the Taco Cups
2 cups shredded cheddar cheese
½ cup shredded Monterey Jack cheese
1 tablespoon grated Parmesan cheese
Nonstick cooking spray
For the Beef Filling
1 lb (450 g) lean ground beef
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon dried oregano
1 tablespoon water
Optional Toppings
¼ cup shredded lettuce
¼ cup diced tomato
2 tablespoons finely diced red onion
¼ cup diced avocado
2 tablespoons sour cream
2 tablespoons chopped fresh cilantro
Sliced jalapeño
Fresh lime juice
Instructions
1. Prepare the beef
Heat a large skillet over medium-high heat.
Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon until browned and fully cooked.
Drain excess grease if necessary.
Add chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper, oregano, and water.
Stir well and cook for another 1–2 minutes.
Remove from the heat.
2. Make the cheese cups
Preheat your oven to 375°F (190°C).
Line a large baking sheet with parchment paper or a silicone baking mat.
Make 12 small piles of shredded cheddar and Monterey Jack cheese, leaving space between each pile.
Keep the piles relatively thin and round.
Sprinkle a small amount of Parmesan over each one.
3. Bake the cheese
Bake for approximately 5–7 minutes, or until the cheese has melted and the edges are golden brown.
Watch carefully because cheese can go from golden to burnt quickly.
4. Shape the cups
Allow the cheese rounds to cool for approximately 30–60 seconds.
While they are still flexible, carefully lift each cheese round and place it over the bottom of an upside-down muffin tin.
Gently press the cheese around the muffin cup to create a taco-cup shape.
Let them cool completely until firm.
Tip: Work quickly because the cheese becomes crisp as it cools.
5. Fill the taco cups
Once the cheese cups are firm, add approximately 1–2 tablespoons of seasoned beef to each cup.
Top with lettuce, tomato, avocado, onion, sour cream, cilantro, or jalapeño as desired.
Finish with a squeeze of fresh lime juice.
Serve immediately.
Air Fryer Option
You can also make the cheese shells in an air fryer.
Preheat the air fryer to 350°F (175°C).
Place small piles of cheese on parchment made for air fryers.
Cook for approximately 4–6 minutes until melted and lightly golden.
Carefully remove while flexible.
Shape over an upside-down muffin tin or small heat-safe cups.
Allow them to cool and become crisp.
Fill with seasoned beef and toppings.
Cook in batches so the cheese rounds don’t touch.

Turkey Taco Cups
Use lean ground turkey for a lighter option.
Bacon Cheeseburger Taco Cups
Add crispy cooked bacon and a little extra cheddar.
Spicy Taco Cups
Add diced jalapeños, cayenne pepper, or hot sauce to the beef.
Guacamole Taco Cups
Fill each cup with beef and a small spoonful of homemade guacamole.
Breakfast Taco Cups
Fill the cheese cups with scrambled eggs, cooked sausage, and a little cheddar.
Tips for Perfect Taco Cups
Use freshly shredded cheese when possible because it melts more evenly.
Don’t make the cheese layers too thin or they may break when shaped.
Don’t let the cheese cool completely before shaping.
Don’t overfill the cups because the shells are delicate.
Drain the beef well so excess grease doesn’t make the cheese shells soggy.
Add wet toppings such as tomato, salsa, and sour cream immediately before serving.
For the lowest-carb version, use beef, cheese, lettuce, and sour cream while limiting tomato and onion.
Q&A
Q: Are these really zero-carb?
Not technically. Cheese and beef contain very small amounts of carbohydrates, and toppings add more. They are better described as ultra-low-carb or nearly zero-carb, depending on the ingredients.
Q: Can I make the taco cups without beef?
Yes. Use shredded chicken, ground turkey, cooked shrimp, or simply fill them with avocado and vegetables.
Q: Why did my cheese cups break?
They may have been baked too long, made too thin, or allowed to cool completely before shaping. Shape them while they’re still warm and flexible.
Q: Can I use mozzarella?
Yes, but mozzarella is softer and less flavorful than cheddar. A cheddar-Monterey Jack combination works particularly well.
Q: Can I make them ahead of time?
Yes. The cheese shells can be prepared several hours ahead. Store them in an airtight container at room temperature and add the filling shortly before serving.
Q: Can I refrigerate filled taco cups?
It’s better to store the shells and filling separately. Refrigeration can make the crispy cheese shells softer.
Q: Can I freeze the taco cups?
The cooked beef can be frozen, but freezing the finished cheese cups isn’t recommended because their texture may change.
Q: Can I use store-bought taco seasoning?
Yes, but check the label because some taco seasoning mixes contain starches, sugar, or other carbohydrates.
Q: How can I make these even lower in carbs?
Use cheese and seasoned meat as the main filling and minimize tomato, onion, corn, beans, and sugary sauces.
Q: What is the best dipping sauce?
Sour cream, guacamole, creamy cilantro-lime sauce, or a low-carb salsa all work beautifully.
Q: Are these keto-friendly?
They can fit into a keto diet when made with low-carb ingredients and appropriate portions. Always calculate the carbohydrates from the specific brands and toppings you use.
