2 tablespoons red onion, finely diced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 teaspoon lemon zest
1 tablespoon extra-virgin olive oil
Optional Lemon-Garlic Yogurt Sauce
½ cup plain Greek yogurt
1 tablespoon fresh lemon juice
1 small garlic clove, finely grated
1 tablespoon chopped fresh parsley
â…› teaspoon salt
1–2 tablespoons water, as needed
Instructions
1. Roast the Sweet Potatoes
Preheat the oven to 425°F (220°C).
Wash and scrub the sweet potatoes thoroughly.
Pat them dry.
Pierce each potato several times with a fork.
Rub them with olive oil.
Sprinkle with salt, black pepper, oregano, and garlic powder.
Place them on a parchment-lined baking sheet.
Roast for 45–60 minutes, depending on their size.
They are ready when a knife or fork slides easily into the center.
2. Prepare the Mushrooms
While the sweet potatoes roast, heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Add the sliced mushrooms.
Cook for 6–8 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.
3. Add Garlic & Spinach
Add minced garlic to the mushrooms.
Cook for about 30–60 seconds.
Add the spinach in handfuls.
Cook for 2–3 minutes, stirring, until the spinach wilts.
Add oregano, red pepper flakes, salt, and black pepper.
Remove from heat.
Stir in fresh lemon juice.
Taste and adjust the seasoning.
4. Prepare the Optional Yogurt Sauce
In a small bowl, combine:
Greek yogurt
Lemon juice
Garlic
Parsley
Salt
Whisk until smooth.
Add water 1 tablespoon at a time until the sauce is thin enough to drizzle.
5. Prepare the Sweet Potatoes for Stuffing
Once the potatoes are tender:
Remove them from the oven.
Let them cool for approximately 5 minutes.
Cut a deep slit lengthwise down the center of each potato.
Gently squeeze the sides to open them.
Fluff the inside lightly with a fork.
Keep the potato intact rather than scooping everything out.
6. Load the Sweet Potatoes
Divide the garlic spinach and mushroom mixture between the four sweet potatoes.
Top each one with:
Feta
Kalamata olives
Cherry tomatoes
Red onion
Fresh parsley
Fresh dill
Lemon zest
7. Finish & Serve
Drizzle with extra-virgin olive oil.
Add a generous drizzle of the lemon-garlic yogurt sauce if using.
Finish with freshly cracked black pepper and serve warm.

Recipe Q&A
Q: Can I prepare the sweet potatoes ahead of time?
Yes. Roast them up to 2 days ahead and refrigerate them in an airtight container. Reheat at 400°F (200°C) before stuffing.
Q: Can I use frozen spinach?
Yes. Thaw it completely and squeeze out as much water as possible before adding it to the mushrooms.
Q: Can I use different mushrooms?
Absolutely. Cremini, white button, shiitake, or portobello mushrooms all work well.
Q: Can I use regular potatoes?
Yes, but sweet potatoes provide a natural sweetness that pairs especially well with salty feta and olives.
Q: Can I make this vegan?
Yes. Use vegan feta and dairy-free yogurt, or simply omit the feta and yogurt sauce.
Q: How do I prevent watery spinach and mushrooms?
Cook the mushrooms until most of their moisture has evaporated before adding the spinach. Also avoid overcrowding the skillet.
Q: Can I meal prep this recipe?
Yes. Store the roasted sweet potatoes, spinach-mushroom mixture, and toppings separately. Assemble and reheat when ready to eat.
Q: How long do leftovers last?
Store in the refrigerator for up to 3–4 days in airtight containers.
Q: Can I freeze stuffed sweet potatoes?
Yes, but the texture of the spinach and feta may change slightly. For best results, freeze the roasted sweet potatoes separately and add fresh toppings after reheating.
Q: What can I serve with these sweet potatoes?
A Greek salad, lentil salad, hummus, roasted chickpeas, or grilled vegetables make excellent accompaniments.
Q: Can I make this lower-carb?
Sweet potatoes are naturally carbohydrate-rich, so they are not ideal for a strict low-carb diet. For a lower-carb variation, use roasted zucchini, eggplant, or bell peppers as the base instead.
