Ingredients

For the Mushrooms

  • 4 large portobello mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic, finely minced
  • ½ tsp dried Italian seasoning
  • ¼ tsp black pepper
  • ½ tsp salt

For the Filling

  • 1 cup (100–120 g) shredded mozzarella
  • ½ cup cherry tomatoes, halved
  • 2 tbsp Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped
  • ½ tsp dried oregano
  • ¼ tsp chili flakes (optional)

For Topping

  • 6–8 fresh basil leaves
  • ½ cup additional cherry tomatoes, halved
  • 1 tbsp olive oil
  • Freshly ground black pepper
  • Optional: 1–2 tbsp balsamic glaze

 Full Detailed Recipe

1. Prepare the mushrooms

Preheat oven to 400°F (200°C).

Gently wipe the mushrooms clean with a damp paper towel.

Remove the stems and carefully scrape out the dark gills with a spoon. Don’t scrape too deeply—you want the mushroom cap to remain intact.

Pat the mushrooms dry.

2. Make the garlic-herb oil

In a small bowl, combine:

  • 2 tbsp olive oil
  • minced garlic
  • Italian seasoning
  • salt
  • black pepper

Mix well.

Brush the mixture generously over the inside and outside of each mushroom.

3. Roast the mushrooms briefly

Place the mushrooms cap-side down on a parchment-lined baking tray.

Roast for 8–10 minutes.

The mushrooms will release some water. Carefully drain or blot away excess liquid.

This step prevents the finished mushrooms from becoming watery.

4. Prepare the filling

While the mushrooms roast, combine in a bowl:

  • Mozzarella
  • Parmesan
  • Cherry tomatoes
  • Parsley
  • Oregano
  • Chili flakes, if using

Mix gently.

5. Stuff the mushrooms

Remove the mushrooms from the oven.

Fill each mushroom generously with the cheese-and-tomato mixture.

Don’t press the filling down too firmly; keeping it slightly piled up gives you the beautiful melted-cheese appearance seen in the photo.

6. Bake until golden

Return the stuffed mushrooms to the oven.

Bake at 400°F (200°C) for 10–15 minutes, until:

  • The cheese is completely melted
  • The edges are bubbling
  • The top is lightly golden
  • The mushroom is tender

For a more deeply browned top, use the broiler/grill for 1–2 minutes at the end. Watch closely because cheese can burn quickly.

7. Add fresh toppings

Remove from the oven and immediately add:

  • Fresh basil leaves
  • Fresh halved cherry tomatoes
  • A drizzle of olive oil
  • Freshly ground black pepper

For a sweet-tangy finish, drizzle a little balsamic glaze over the top.

How to Get the Look in the Photo

For that restaurant-style appearance:

  • Use very large portobello caps.
  • Choose colorful red and yellow cherry tomatoes.
  • Use freshly grated mozzarella rather than pre-shredded cheese.
  • Let some cheese spill naturally over the sides.
  • Add fresh basil after baking, not before.
  • Finish with olive oil and a few drops of balsamic glaze.
  • Serve immediately while the cheese is still stretchy and glossy.

 Optional Variations

Creamy version

Add 2 tbsp cream cheese to the mozzarella mixture.

Extra cheesy

Use:

  • ¾ cup mozzarella

  • 2 tbsp Parmesan

Spicy

Add ½ tsp red pepper flakes or finely chopped fresh chili.

 Recipe Q&A

Can I use regular mushrooms?

Yes, but use large portobello mushrooms for the best result. Smaller mushrooms won’t hold as much filling.

Why are my mushrooms watery?

Mushrooms naturally contain a lot of water. Pre-roasting them for 8–10 minutes and draining the released liquid helps considerably.

Can I prepare them ahead?

Yes. Assemble the stuffed mushrooms, cover, and refrigerate for up to 24 hours. Bake when ready.

Can I use mozzarella balls?

Yes. Fresh mozzarella works very well, but pat it dry first so it doesn’t release too much moisture.

Can I make them without Parmesan?

Absolutely. Replace it with extra mozzarella or another hard Italian-style cheese.

Can I air-fry them?

Yes. Air fry at approximately 375°F (190°C) for 10–14 minutes, checking near the end because cooking times vary by air fryer.

How do I store leftovers?

Refrigerate in an airtight container for up to 3 days. Reheat in an oven or air fryer for the best texture.

What should I serve with them?

They’re excellent with a simple green salad, roasted vegetables, garlic bread, pasta, or rice.

Best served hot, with the mozzarella bubbling, tomatoes juicy, and fresh basil added right before serving.
