Yield: 4–6 servings
Prep Time: 20 minutes
Cook Time: 50–60 minutes
Total Time: About 1 hour 15 minutes
Ingredients
For the Chicken & Potatoes:
6 bone-in, skin-on chicken thighs
1 1/2 lb (700 g) baby potatoes, halved
1 large onion, cut into wedges
1 red bell pepper, sliced
4 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
1/2 teaspoon chili flakes, optional
1 tablespoon fresh parsley, chopped
For the Lemon Herb Marinade:
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon dried oregano
1/2 teaspoon paprika
2 cloves garlic, finely minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional Finishing:
Fresh parsley
Lemon wedges
Crumbled feta cheese
A drizzle of pan juices
Instructions
Preheat the Oven
Preheat your oven to 425°F (220°C).
Lightly grease a large rimmed baking sheet or roasting tray with a little olive oil.
Prepare the Potatoes
Wash the potatoes thoroughly and cut them in half.
If using larger potatoes, cut them into evenly sized chunks so they cook at the same rate.
Place them in a large bowl and add:
2 tablespoons olive oil
Paprika
Oregano
Thyme
Garlic powder
Onion powder
Salt
Black pepper
Chili flakes, if using
Toss until the potatoes are evenly coated.
Prepare the Chicken
Pat the chicken thighs very dry with paper towels. This is important because dry skin browns and crisps much better.
Place the chicken in a bowl and add the lemon herb marinade ingredients.
Rub the marinade thoroughly over the chicken, including under the skin where possible.
Let the chicken sit for 10–15 minutes while you prepare the tray.
Arrange the Tray
Spread the seasoned potatoes across the baking tray.
Add the onion wedges and sliced red bell pepper.
Scatter the minced garlic around the vegetables.
Place the chicken thighs skin-side up among the potatoes.
Try not to overcrowd the tray. Leaving some space allows the vegetables to roast rather than steam.
Start Roasting
Place the tray in the preheated oven.
Roast uncovered for approximately 35 minutes.
The chicken will begin browning while the potatoes absorb the flavorful juices.
Turn the Potatoes
After about 35 minutes, carefully remove the tray from the oven.
Turn the potatoes and vegetables so they brown evenly.
Leave the chicken skin-side up and do not turn it.
Return the tray to the oven.
Finish Roasting
Continue roasting for another 15–25 minutes.
The chicken should be deeply golden and cooked through, while the potatoes should be crisp outside and tender inside.
The thickest part of the chicken should reach at least 165°F (74°C) on an instant-read thermometer.
For extra-crispy chicken skin, switch the oven to broil/grill for 2–3 minutes at the end. Watch carefully so the skin doesn’t burn.
Rest the Chicken
Remove the tray from the oven.
Let the chicken rest for 5–10 minutes before serving.
This allows the juices to redistribute and keeps the chicken more tender.
Garnish & Serve
Sprinkle fresh chopped parsley over everything.
Serve with lemon wedges and spoon some of the flavorful roasting juices over the chicken and potatoes.
Optional: Add a small amount of crumbled feta just before serving for a salty, creamy contrast.
Serving Suggestions
This tray bake is a complete meal on its own, but you can serve it with:
Greek salad
Steamed green beans
Roasted broccoli
Simple cucumber salad
Garlic bread
Tzatziki sauce
Creamy garlic yogurt sauce
Tips for the Best Tray Bake
Dry the chicken skin thoroughly before seasoning for better browning.
Cut the potatoes into similar sizes so they finish together.
Don’t overcrowd the tray.
Keep the chicken skin-side up throughout roasting.
Use a meat thermometer rather than relying only on cooking time.
For crispier potatoes, place them cut-side down against the hot baking tray.
Fresh lemon juice added after roasting gives the dish a brighter flavor.
Let the chicken rest before serving.
Storage
Refrigerator:
Store leftovers in an airtight container for up to 3–4 days.
Reheating:
Reheat in a 375°F (190°C) oven until hot. This helps the chicken skin and potatoes stay crisp.
Microwave:
You can microwave leftovers, but the chicken skin and potatoes will be softer.
Freezer:
Cooked chicken and potatoes can be frozen for up to 2–3 months, although the potatoes may lose some of their original crisp texture.

Q&A
Q: Can I use boneless chicken thighs?
A: Yes. Boneless thighs cook faster, so start checking them around 25–30 minutes. Make sure they reach at least 165°F (74°C).
Q: Can I use chicken breasts?
A: Yes. Chicken breasts can be used, but they are leaner and can dry out more easily. Use similar-sized pieces and check their temperature early.
Q: Can I use chicken drumsticks?
A: Absolutely. Drumsticks work very well with this recipe. They may need a little extra cooking time depending on their size.
Q: Can I use regular potatoes?
A: Yes. Yukon Gold, red potatoes, or russet potatoes all work. Cut them into roughly 1½-inch pieces.
Q: Why aren’t my potatoes crispy?
A: The most common causes are overcrowding, excess moisture, or insufficient oven heat. Spread the potatoes into a single layer and leave space between the pieces.
Q: Can I prepare this ahead of time?
A: Yes. You can season the chicken and prepare the vegetables several hours ahead. Keep everything refrigerated until you’re ready to roast.
Q: Can I add carrots?
A: Yes. Carrots are excellent in this tray bake. Cut them into thick pieces so they don’t become overly soft.
Q: Can I add broccoli?
A: Yes, but add it during the final 15–20 minutes so it doesn’t become too soft or burnt.
Q: Can I make this spicy?
A: Yes. Increase the chili flakes or add 1/2 teaspoon of cayenne pepper to the chicken seasoning.
Q: What gives the chicken the best flavor?
A: The combination of garlic, lemon, oregano, paprika, Dijon mustard, and the natural juices released during roasting creates a rich, savory flavor.
Q: How do I know when the chicken is done?
A: The safest method is to check the thickest part with a food thermometer. It should reach at least 165°F (74°C).
Q: Can I make this without the honey?
A: Yes. Simply omit it. The honey adds a small amount of sweetness and helps the chicken brown, but it isn’t essential.
Q: Can I use dried garlic instead of fresh garlic?
A: Yes. Use about 1 teaspoon of garlic powder in place of the fresh garlic, although fresh garlic provides a stronger roasted flavor.
Q: What sauce goes best with this?
A: Garlic yogurt sauce, tzatziki, or a simple lemon-herb yogurt sauce pairs especially well with the roasted chicken and potatoes.
