Ingredients:

  • 2 cups almond flour

  • 3 eggs

  • 1/3 cup melted butter or coconut oil

  • 1/3–1/2 cup erythritol or monk fruit sweetener

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • Pinch of salt

  • 1/2 cup fresh or frozen cranberries (unsweetened)


Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Mix eggs, melted butter, sweetener, and vanilla.

  3. Stir in almond flour, baking powder, and salt.

  4. Fold in cranberries.

  5. Divide into small loaf pans (like in the picture).

  6. Bake 25–35 minutes until golden and set in the center.

  7. Cool before slicing.
