Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour
Servings: 6

Ingredients

For the Casserole:

  • 1½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 cups quick-cooking white rice
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper, diced
  • ½ small onion, thinly sliced
  • 2 cups chicken broth
  • 1½ cups teriyaki sauce or teriyaki glaze
  • ¼ cup hoisin sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • ½ tsp black pepper
  • ½ tsp sesame oil, optional

For Garnish:

  • 3 green onions, sliced
  • 1 tbsp sesame seeds
  • Extra teriyaki sauce, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
  2. Place the chicken pieces in a large bowl. Add the teriyaki sauce, hoisin sauce, olive oil, garlic, ginger, black pepper, and sesame oil. Stir until the chicken is evenly coated.
  3. Add the uncooked rice, broccoli, carrots, bell pepper, and onion to the prepared casserole dish.
  4. Pour the seasoned chicken and sauce mixture over the rice and vegetables. Stir gently until everything is evenly distributed.
  5. Pour the chicken broth over the entire mixture. Make sure the rice is spread evenly across the bottom of the dish.
  6. Cover the dish tightly with aluminum foil. Bake for 35 minutes.
  7. Carefully remove the foil and stir gently. Continue baking uncovered for another 10–15 minutes, or until the chicken reaches 165°F (74°C), the rice is tender, and most of the liquid has been absorbed. Similar teriyaki casserole methods combine chicken, rice, vegetables, teriyaki sauce, and broth before covered baking. 
  8. Remove the casserole from the oven and let it rest for 10 minutes. This allows the rice to absorb any remaining sauce.
  9. Garnish with sliced green onions and sesame seeds. Serve warm with extra teriyaki sauce if desired.

Allergen Information

Contains: Soy and wheat if using regular soy-sauce-based teriyaki or hoisin sauce.

Usually dairy-free.

For a gluten-free version, use gluten-free teriyaki and hoisin sauces.

Tips

Use teriyaki glaze for a thicker, sweeter casserole or regular teriyaki sauce for a lighter texture.

Do not skip the resting time because the rice continues absorbing moisture after baking.

If using brown rice, choose a quick-cooking variety and check the package directions because it may require extra liquid and cooking time.

Frozen broccoli can be used, but thaw and drain it first to prevent excess water.

For a sweeter flavor, add 1 tablespoon honey or brown sugar to the sauce.

For a spicy version, add 1–2 teaspoons sriracha or a pinch of red pepper flakes.

Q&A

Can I use cooked rice?

Yes. Use about 4–5 cups cooked rice, reduce the chicken broth to ½ cup, and bake covered for approximately 25–30 minutes.

Can I use leftover chicken?

Yes. Shredded rotisserie chicken works well. Add it with the rice and vegetables, then bake until everything is hot.

Can I use chicken thighs?

Yes. Chicken thighs stay juicy and work especially well in this casserole.

Can I add pineapple?

Yes. Add ½–1 cup drained pineapple chunks for a sweet and tangy flavor.

Can I make this ahead of time?

You can assemble it up to 24 hours ahead, cover it, and refrigerate it. Let the dish sit at room temperature for about 20 minutes before baking.

How do I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Can I freeze it?

Yes. Cool completely, portion into freezer-safe containers, and freeze for up to 3 months. Thaw in the refrigerator before reheating.

How do I reheat it?

Reheat in the microwave or covered in a 350°F oven. Add a splash of broth or water if the rice seems dry.
