Scottish Beef & Barley Stew

A hearty, pub-style Scottish beef, barley, potato and vegetable stew inspired by the photo. The Scotch whisky shown can be used as an optional flavoring, but the stew is excellent without it.

 Ingredients — 6 servings

Beef & stew

  • 2 lb (900 g) beef chuck, cut into 1½-inch cubes
  • 2 tbsp olive oil
  • 1½ tsp salt, divided
  • 1 tsp black pepper
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 3 large carrots, cut into chunks
  • 2 celery stalks, sliced
  • 1½ lb (680 g) Yukon Gold or russet potatoes, cut into chunks
  • ¾ cup (150 g) pearl barley
  • 6 cups (1.4 L) beef broth
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • ½ tsp smoked paprika, optional
  • ½ cup Scotch whisky, optional
  • 2 tbsp chopped fresh parsley

Optional thickener

  • 2 tbsp all-purpose flour
  • 2 tbsp cold water

 Method

1. Season the beef
Pat the beef dry. Season with about 1 tsp salt and the black pepper.

2. Brown the beef
Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches for about 2–3 minutes per side. Don’t overcrowd the pot. Transfer the browned beef to a plate.

3. Build the base
Lower the heat to medium. Add onion, carrots and celery. Cook for 5–6 minutes until the onion softens. Add garlic and cook for another 30–60 seconds.

4. Add the whisky — optional
If using Scotch whisky, carefully add it to the pot and simmer for 2–3 minutes, scraping up the browned bits from the bottom.

For a completely alcohol-free stew, simply skip the whisky and continue with the next step.

5. Add the broth and seasonings
Stir in tomato paste, Worcestershire sauce, thyme, rosemary and smoked paprika. Add the beef back to the pot.

Pour in the beef broth and add the bay leaves. Bring to a gentle boil.

6. Slow-cook the beef
Reduce to low heat, cover, and simmer for approximately 1½ hours.

7. Add barley and potatoes
Add the pearl barley and potatoes. Continue simmering, partially covered, for 35–45 minutes, until the barley is tender, potatoes are cooked, and the beef is fork-tender.

Stir occasionally and add a little extra broth or water if it becomes too thick.

8. Thicken if desired
For a thicker, gravy-like stew, mix flour with cold water to make a smooth slurry. Stir it into the simmering stew and cook for 3–5 minutes.

9. Finish
Remove the bay leaves. Taste and adjust salt and pepper. Stir in fresh parsley.

Serve piping hot with crusty bread.

Ladle the stew into a wide bowl and make sure each serving has plenty of beef cubes, potatoes, carrots and pearl barley visible on top. Finish with chopped parsley and freshly cracked black pepper. Serve with warm crusty bread.
