These Roasted Sweet Potato Rounds with Honey & Feta are crispy around the edges, tender inside, and perfectly balanced with sweet honey, creamy salty feta, and aromatic herbs. They make an easy side dish, appetizer, or healthy snack.
Ingredients:
2 large sweet potatoes, washed and sliced into ½-inch rounds
2 tablespoons olive oil
½ teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon dried thyme
½ teaspoon salt
¼ teaspoon black pepper
3 tablespoons crumbled feta cheese
2 tablespoons honey
1 tablespoon chopped fresh parsley
1 tablespoon chopped walnuts or pecans, optional
½ teaspoon red pepper flakes, optional
Instructions:
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Wash and dry the sweet potatoes thoroughly. Slice them into even ½-inch rounds so they cook evenly.
Place the sweet potato rounds in a large bowl. Add olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper. Toss well until every slice is evenly coated.
Arrange the rounds in a single layer on the prepared baking sheet, leaving a little space between each piece.
Roast for 20–25 minutes, flipping the rounds halfway through cooking. Continue roasting until the sweet potatoes are tender in the center and golden and slightly crisp around the edges.
Remove from the oven and immediately drizzle the honey over the warm sweet potato rounds.
Sprinkle with crumbled feta cheese, fresh parsley, and optional chopped walnuts or pecans. Add red pepper flakes if you prefer a little heat.
Serve warm as an appetizer, side dish, or snack.

Q/S:
Can I use maple syrup instead of honey?
Yes. Use 2 tablespoons of maple syrup for a slightly deeper, caramel-like flavor.
Can I make these without feta?
Yes. You can leave out the feta or replace it with goat cheese or another crumbly cheese.
Can I use different seasonings?
Yes. Cinnamon and a pinch of chili powder can create a sweet-and-spicy version, while rosemary and garlic give a more savory flavor.
Can I make them in an air fryer?
Yes. Air fry at 380°F (193°C) for about 12–16 minutes, flipping halfway through, until tender and lightly crisp.
How should I store leftovers?
Store them in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer for the best texture.
Can I prepare them ahead of time?
Yes. Roast the sweet potato rounds ahead of time and add the honey, feta, and fresh herbs just before serving.
