Juicy, tender roasted chicken coated with rich garlic butter, fresh herbs, and flavorful seasonings. The skin becomes beautifully golden and crispy while the meat stays moist and delicious. Perfect for a comforting family dinner or special Sunday meal.
Ingredients:
1 whole chicken, about 4–5 lb (1.8–2.3 kg)
6 tablespoons unsalted butter, softened
6 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme leaves
2 tablespoons fresh parsley, chopped
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1½ teaspoons salt
½ teaspoon black pepper
½ teaspoon dried oregano
1 lemon, halved
1 small onion, quartered
1 cup chicken broth
1 teaspoon lemon zest
For the roasting pan:
1 lb (450 g) baby potatoes, halved
3 carrots, cut into large pieces
1 whole garlic bulb, halved
2–3 sprigs fresh rosemary
3–4 sprigs fresh thyme
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil
Instructions:
Prepare the chicken:
Remove the chicken from the refrigerator about 30 minutes before cooking. Remove any giblets from inside the cavity and pat the chicken completely dry with paper towels. Dry skin helps it become crisp and golden.
Make the garlic herb butter:
In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, paprika, onion powder, garlic powder, dried oregano, lemon zest, salt, and black pepper. Mix until everything is evenly combined.
Prepare the chicken:
Gently loosen the skin over the chicken breasts using your fingers. Be careful not to tear the skin. Spread some of the garlic herb butter underneath the skin, directly over the breast meat.
Rub the remaining butter mixture generously over the outside of the chicken. Make sure the breasts, thighs, wings, and legs are well coated.
Season the cavity:
Place the lemon halves and quartered onion inside the chicken cavity. Add a few sprigs of rosemary and thyme if desired.
Prepare the vegetables:
Place the potatoes, carrots, and halved garlic bulb in a large roasting pan. Toss them with olive oil, salt, and black pepper. Spread them around the chicken.
Add the broth:
Pour 1 cup of chicken broth into the bottom of the roasting pan. Try not to pour it directly over the chicken skin because this can prevent the skin from becoming crispy.
Roast:
Preheat the oven to 425°F (220°C).
Place the chicken breast-side up in the center of the roasting pan. Roast uncovered at 425°F for 20 minutes.
Reduce the temperature:
After 20 minutes, reduce the oven temperature to 375°F (190°C). Continue roasting for approximately 1 hour to 1 hour 20 minutes, depending on the size of the chicken.
Baste:
Every 25–30 minutes, spoon some of the pan juices over the chicken. If the skin is becoming too dark before the chicken is cooked through, loosely cover the breast area with aluminum foil.
Check for doneness:
The chicken is ready when the thickest part of the breast and the inner thigh reaches at least 165°F (74°C) on a food thermometer. Avoid touching the bone when taking the temperature.
Rest the chicken:
Remove the chicken from the oven and loosely cover it with foil. Let it rest for 15–20 minutes before carving. Resting allows the juices to redistribute and keeps the meat moist.
Serve:
Carve the chicken and arrange it with the roasted potatoes and carrots. Spoon some of the garlic herb pan juices over the chicken and garnish with fresh parsley and rosemary.
Optional Garlic Butter Pan Sauce:
Pour the pan juices into a small saucepan and skim off excess fat if desired. Simmer for 3–5 minutes. Add 1 tablespoon butter and a small squeeze of lemon juice. Stir until smooth and serve warm over the chicken.

Helpful Tips:
For extra-crispy skin, make sure the chicken is thoroughly dried before adding the butter.
Fresh herbs give the chicken a stronger and fresher flavor, but dried herbs can be used when fresh herbs are unavailable.
Do not cut the chicken immediately after removing it from the oven. Resting for 15–20 minutes helps keep the meat juicy.
If using a smaller chicken, start checking the internal temperature earlier to prevent overcooking.
Leftover chicken can be refrigerated in an airtight container for 3–4 days.
The cooked chicken can also be shredded and used in sandwiches, salads, wraps, soups, or pasta dishes.
