These crispy spiral potato skewers are golden, crunchy on the outside, tender inside, and packed with buttery garlic-herb flavor. They make a fun side dish, appetizer, or snack and are perfect for serving with ketchup, ranch, or garlic dipping sauce.

Ingredients

6 medium potatoes, preferably Yukon Gold or russet
3 tablespoons melted butter
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1 teaspoon salt, or to taste
2 tablespoons grated Parmesan cheese
1 tablespoon fresh parsley, chopped
Wooden skewers

Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Wash and scrub the potatoes well. Keep the skin on for extra crispiness.

Insert a wooden skewer lengthwise through the center of each potato.

Using a sharp knife, carefully cut the potato in a continuous spiral around the skewer. Keep the knife slightly angled and rotate the potato as you cut, making thin slices without cutting completely through.

Gently spread the potato along the skewer so the slices separate slightly.

In a small bowl, combine melted butter, olive oil, minced garlic, paprika, garlic powder, onion powder, oregano, black pepper, and salt.

Brush the seasoned butter mixture generously over the potatoes, making sure it gets between the slices.

Place the skewers on the prepared baking sheet.

Bake for 35–45 minutes, turning and brushing with more seasoning mixture halfway through. Continue baking until the potatoes are deeply golden and crispy.

Sprinkle with Parmesan cheese during the final 5 minutes of baking.

Remove from the oven and garnish with fresh parsley. Serve hot with your favorite dipping sauce.
