Golden, crispy onion and egg fritters with tender centers and savory herbs. Quick, budget-friendly, and perfect for breakfast, brunch, or a light snack.

Ingredients

  • 4 large eggs
  • 1 large onion, thinly sliced
  • ½ cup all-purpose flour
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh parsley, chopped
  • 1 green chili, finely chopped, optional
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon baking powder
  • 2 tablespoons grated Parmesan cheese, optional
  • 2–3 tablespoons water, if needed
  • ½ cup vegetable oil, for frying

Instructions

  1. Prepare the Onion
  • Thinly slice the onion and place it in a large bowl.
  • Sprinkle with a small pinch of salt and gently separate the slices.
  • Let it sit for 5 minutes to soften slightly.
  1. Prepare the Batter
  • Add the eggs to the onions and whisk well.
  • Add flour, cornstarch, baking powder, garlic powder, paprika, black pepper, and salt.
  • Add parsley, green chili, and Parmesan if using.
  • Mix until everything is evenly coated.
  • If the mixture seems too thick, add water 1 tablespoon at a time. The batter should be thick enough to hold together when spooned into the pan.
  1. Heat the Oil
  • Heat the vegetable oil in a large skillet over medium heat.
  • Test the oil by dropping in a tiny amount of batter. It should sizzle immediately without browning too quickly.
  1. Fry the Fritters
  • Scoop about 2 tablespoons of the mixture into the hot oil for each fritter.
  • Gently flatten each one with the back of a spoon.
  • Fry for about 2–3 minutes per side, until deeply golden and crispy.
  • Avoid overcrowding the pan; cook in batches if necessary.
  1. Drain
  • Transfer the cooked fritters to a plate lined with paper towels or a wire rack.
  • Allow excess oil to drain.
  • Serve immediately while crispy.
