Ingredients
- 2 medium zucchini
- 2 eggs
- ½ cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- ½ tsp Italian seasoning
- ½ tsp black pepper
- ¼ tsp salt
- 1 tbsp olive oil or cooking spray
Directions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and slice zucchini into rounds about ¼-inch thick.
- Pat the slices dry with paper towels so they become crispier.
- In one bowl, whisk the eggs.
- In another bowl, combine breadcrumbs, Parmesan, garlic powder, Italian seasoning, black pepper, and salt.
- Dip each zucchini slice into the egg, then coat well with the breadcrumb-Parmesan mixture.
- Arrange in a single layer on the baking sheet. Lightly spray or drizzle with olive oil.
- Bake for 12 minutes, then carefully flip each piece.
- Bake another 8–12 minutes, until golden brown and crispy.
- For extra browning, broil for 1–2 minutes, watching closely.
- Serve immediately with ranch, marinara, or your favorite dipping sauce.
