Yield: 1 large loaf, about 10–12 slices
Pan: 9 × 5-inch / 23 × 13-cm loaf pan
Prep: 20 minutes
Bake: 50–65 minutes
Total: about 1¼ hours
Ingredients
Wet ingredients
3 very ripe bananas — about 300–330 g peeled
2 large eggs, room temperature
½ cup / 120 ml milk
⅓ cup / 75 g melted butter
or 60 ml neutral oil
1 tsp vanilla extract
1 tbsp honey or maple syrup, optional
Dry ingredients
1 cup / 90 g rolled oats
1 cup / 125 g all-purpose flour
½ cup / 60 g whole-wheat flour
½ cup / 100 g brown sugar
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
½ tsp ground cardamom, optional
Fruit
¾ cup / 90–100 g dried cranberries
1 tbsp orange zest, optional but excellent
Mixed nuts inside
Use 100 g total:
30 g walnuts
25 g almonds
20 g pecans
15 g hazelnuts
10 g pistachios
You can simplify this to 100 g walnuts + pecans if you don’t have the full mixture.
Crunchy nut topping
Use approximately 120–150 g total:
40 g almonds, roughly chopped
30 g walnuts, chopped
25 g pecans, chopped
20 g hazelnuts, chopped
15 g pistachios
1 tbsp rolled oats
1 tbsp brown sugar
1 tbsp melted butter
Pinch of salt
For the exact visual style in your photo, chop some nuts fairly small and leave some pieces around 1–1.5 cm. Don’t grind them into nut meal.
Full Method
1. Prepare the oven
Heat oven to:
175°C / 350°F
Line a 9 × 5-inch loaf pan with parchment paper, leaving some paper hanging over the sides so the loaf can be lifted out.
Lightly grease the exposed sides.
2. Prepare the cranberries
If your dried cranberries are quite dry, put them in a bowl and cover with hot water for 10–15 minutes.
Drain extremely well and pat dry.
This produces softer, juicier cranberry pieces rather than hard chewy bits. Soaking dried cranberries before using them is also recommended in cranberry-banana loaf recipes.

3. Toast the nuts
For the best flavor, toast the nuts before adding them.
Spread the nuts on a baking tray and toast at:
160°C / 325°F for 7–10 minutes
Cool completely.
Then chop them.
Important: Don’t over-toast them because they will receive additional heat while the loaf bakes.
4. Mash the bananas
Put the peeled bananas in a large bowl.
Mash with a fork.
You want some tiny pieces remaining rather than making completely smooth banana purée.
Very ripe bananas are ideal because they provide sweetness and moisture.
5. Mix the wet ingredients
Add to the bananas:
2 eggs
melted butter
milk
vanilla
honey/maple syrup
orange zest, if using
Whisk until combined.
Don’t worry if the mixture looks slightly lumpy.
6. Mix the dry ingredients
In another large bowl combine:
flour
whole-wheat flour
oats
brown sugar
baking powder
baking soda
salt
cinnamon
nutmeg
cardamom
Mix thoroughly.
7. Combine
Pour the banana mixture into the dry ingredients.
Fold gently with a spatula.
Do not beat the batter.
Stop mixing as soon as you can no longer see dry flour.
The batter should be thick and spoonable, not liquid like cake batter.
8. Add cranberries and nuts
Add:
¾ cup dried cranberries
100 g chopped mixed nuts
Fold gently until distributed.
A useful trick is to toss the cranberries and nuts with 1 tablespoon of the flour mixture before adding them. This helps reduce their tendency to sink.
Make the crunchy topping
Combine:
120–150 g chopped mixed nuts
1 tbsp oats
1 tbsp brown sugar
pinch of salt
1 tbsp melted butter
Mix until the nuts are lightly coated.
This is what gives the finished loaf the thick golden, crunchy nut crust seen in your photograph.
Fill the loaf pan
Transfer the batter into the lined pan.
Smooth the top.
Scatter the entire nut mixture over the surface.
Press the nuts very lightly into the batter with your fingers.
Don’t press them deeply—the nuts should remain visible on top.
Baking
Bake at:
175°C / 350°F for 50–65 minutes
Start checking at 50 minutes.
Insert a wooden skewer into the center.
It should come out with:
a few moist crumbs = perfect
wet batter = continue baking
completely dry = probably slightly overbaked
If the nuts become dark before the center is cooked, loosely cover the loaf with aluminum foil and continue baking.
Because banana bread is moist, the center can require substantially longer than the edges.
Cooling — very important
Leave the loaf in the pan for 15 minutes.
Then lift it out using the parchment.
Place on a wire rack and cool for at least 45–60 minutes before slicing.
For the cleanest slices, allow it to cool completely.
The interior continues setting while it cools.
Nut Guide
You asked for all nut information, so here’s how I’d choose them.
Nut Flavor Texture Recommended
Walnut earthy, slightly bitter soft/crunchy
Pecan buttery, sweet crunchy
Almond mild, slightly sweet very crunchy
Hazelnut roasted, aromatic crunchy
Pistachio sweet, distinctive crunchy
Cashew creamy, mild crunchy
Macadamia rich, buttery very crunchy
Brazil nut rich very hard/crunchy
My ideal combination for this loaf
Walnut + almond + pecan + hazelnut + pistachio
It gives the closest appearance to the photograph.
If you only have one type of nut
Use walnuts.
If you want the sweetest flavor
Use pecans + almonds.
If you want maximum crunch
Use almonds + hazelnuts.
If you want a more premium loaf
Use:
30% pecan + 25% walnut + 20% almond + 15% hazelnut + 10% pistachio.
Cranberry Options
You can use:
dried cranberries
sweetened dried cranberries
fresh cranberries
frozen cranberries
For the loaf pictured, dried cranberries are the most suitable because they produce the small red/purple pieces visible in the loaf.
If using fresh/frozen cranberries, reduce them to approximately 100–120 g and expect a more tart, moist loaf. Cranberry-banana bread recipes commonly use either fresh/frozen or dried cranberries.

Easy Substitutions
No whole-wheat flour?
Use another ½ cup all-purpose flour.
No oats?
Use ½ cup additional flour, although the texture won’t be quite as hearty.
No butter?
Use 60 ml neutral oil.
Dairy-free?
Use almond, oat or soy milk and neutral oil instead of butter.
Egg-free?
For each egg, use approximately 60 g unsweetened applesauce. The loaf will be denser.
No brown sugar?
Use white sugar, coconut sugar or approximately 80 g honey/maple syrup.
No cranberries?
Use:
raisins
chopped dates
dried cherries
chopped apricots
Want banana flavor stronger?
Use 4 small bananas, provided the total peeled weight is around 350–400 g. You may need another 5–10 minutes of baking.
Q&A
Q: Why did my loaf sink in the middle?
Usually one of these:
Too much banana/liquid.
The center wasn’t fully baked.
Too much baking soda/baking powder.
The batter was overmixed.
The oven temperature was too low.
The most common culprit is underbaking.
Q: Why are my nuts falling off?
The topping needs a little contact with the batter.
After sprinkling the nuts, press them gently into the surface.
Also, don’t put a thick layer of completely dry nuts on top. Tossing them with a little melted butter and sugar helps them adhere.
Q: Why did the nuts burn?
The nuts are exposed directly to oven heat.
If they’re getting dark after 35–40 minutes, cover the loaf loosely with foil.
Don’t seal it tightly.
Q: Can I use almond flour?
Not as a 1:1 replacement for all the flour.
Almond flour has no gluten and contains considerably more fat, so replacing all the flour will give you a very different loaf.
You can replace about ¼ cup / 25–30 g flour with almond flour for extra richness.
Q: Can I make this gluten-free?
Yes.
Use a 1:1 gluten-free baking flour and certified gluten-free oats.
Check your baking powder, dried fruit and other packaged ingredients as well if strict gluten avoidance is necessary.
Q: Is this recipe healthy?
It contains nutritious ingredients such as bananas, oats, nuts and dried fruit, but it is still a sweet baked good because it contains butter/oil and added sugar.
The nuts contribute unsaturated fats, protein and minerals, while oats contribute fiber.
It’s better described as a wholesome breakfast/snack loaf, not a low-calorie health food.
Q: How should I store it?
Once completely cool:
Room temperature: 2–3 days in an airtight container.
Refrigerator: approximately 5–6 days.
Freezer: 2–3 months.
For freezing, slice the loaf first and wrap individual slices.
Q: How do I keep it moist?
Don’t overbake it.
Also:
use very ripe bananas
don’t overmix
don’t cut it while piping hot
store it airtight once cool
The next day, the banana flavor is often even better.
Q: Can I make muffins from this batter?
Yes.
Fill muffin cups about ¾ full.
Bake at 180°C / 350°F for approximately 20–25 minutes, checking with a skewer.
Q: Can I make it without added sugar?
Yes, particularly if your bananas are extremely ripe.
Reduce the brown sugar to 0–50 g.
The loaf will be less cake-like and less sweet, but the bananas and dried cranberries provide substantial sweetness.
A similar cranberry-banana oat bread recipe notes that some versions can omit sugar because ripe bananas provide enough sweetness.

Q: Why is my loaf dense?
Some density is desirable for this style of banana-oat loaf.
However, if it’s gummy, the likely causes are:
too much banana
underbaking
too much oat flour
overmixing
slicing while hot
Let it cool completely before judging the crumb.
Q: Can I make it in a smaller pan?
Yes, but don’t fill the pan more than about ⅔–¾ full.
For mini loaves, start checking around 25–35 minutes.
Best version for the photograph
If your goal is specifically to recreate the loaf shown, I’d use:
3 very ripe bananas + 90 g oats + 185 g flour + 100 g brown sugar + 2 eggs + 75 g butter + 100 g dried cranberries + 100 g walnuts/pecans inside + 150 g mixed nuts on top.
And don’t skimp on the topping—the large, irregular pieces of toasted almond, walnut, pecan and hazelnut are what create that distinctive bakery-style appearance. Similar published banana-oat cranberry loaves also pair cranberries with pecans/walnuts and oats.
