4 cloves garlic, minced
3 cups low-sodium chicken broth

½ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions
Preheat the oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels. If they are very thick, gently pound them to an even thickness so they cook evenly.
Season both sides of the chicken with Italian seasoning, garlic powder, paprika, salt, and black pepper.
Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat.
Add the chicken and sear for 3–4 minutes per side, until nicely golden. The chicken does not need to be fully cooked yet.
Remove the chicken from the skillet and set aside.
In the same skillet, add balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, and black pepper.
Bring the mixture to a gentle simmer. Cook for 3–5 minutes, stirring occasionally, until slightly reduced and glossy.
Return the chicken to the skillet and spoon some of the balsamic mixture over each piece.
Sprinkle mozzarella evenly over the chicken.
Transfer the skillet to the preheated oven and bake for about 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
While the chicken cooks, prepare the garlic Parmesan rice.
Melt butter in a medium saucepan over medium heat.
Add minced garlic and cook for about 30 seconds, just until fragrant.
Add the uncooked rice and stir for 1–2 minutes, allowing the rice to become lightly toasted.
Pour in the chicken broth. Add Italian seasoning, salt, and black pepper.
Bring to a boil, then reduce the heat to low. Cover tightly and simmer for 15–18 minutes, or until the rice is tender and the liquid has been absorbed.
Remove the rice from the heat and let it sit covered for 5 minutes.
Fluff the rice with a fork, then gently stir in the grated Parmesan cheese and fresh parsley.
If using spinach, stir it into the hot rice during the final few minutes so it wilts. Cherry tomatoes can be folded in just before serving.
Serve the balsamic mozzarella chicken over a generous portion of garlic Parmesan rice.
Spoon extra balsamic sauce from the skillet over the chicken and rice. Garnish with fresh basil or parsley if desired.
