Ingredients
For the Zucchini
3 large zucchini
1–2 tablespoons olive oil
¼ teaspoon salt
¼ teaspoon black pepper
For the Filling
10–12 oz Italian sausage, casings removed
6 oz mushrooms, finely chopped
1 cup fresh spinach, finely chopped
1 cup whole-milk ricotta cheese
¼ cup finely grated Parmesan cheese
2–3 garlic cloves, minced
1 teaspoon Italian seasoning
¼ teaspoon black pepper
¼ teaspoon salt, or to taste
¼ teaspoon red pepper flakes, optional
For the Sauce & Topping
2 cups marinara sauce
1 cup shredded mozzarella cheese
2–3 tablespoons grated Parmesan
Fresh basil or parsley, optional
Instructions
1. Prepare the zucchini
Wash and dry the zucchini well. Cut off both ends.

Using a mandoline, vegetable peeler, or sharp knife, slice the zucchini lengthwise into thin strips, approximately ⅛ inch (2–3 mm) thick.

Try to keep the strips fairly uniform so they cook evenly and roll easily.

Place the zucchini strips on a large tray lined with paper towels. Sprinkle lightly with salt and let them sit for 10–15 minutes.

The salt will draw excess water out of the zucchini.

Pat both sides very thoroughly with paper towels.

Do not skip this step. Zucchini contains a lot of water, and removing some of it prevents the finished dish from becoming watery.

2. Pre-cook the zucchini
Preheat the oven to 400°F (200°C).

Arrange the zucchini strips in a single layer on a baking sheet.

Brush lightly with olive oil and season with black pepper.

Bake for 8–10 minutes, just until the zucchini becomes flexible.

Do not overcook it. The strips should be soft enough to roll but still hold their shape.

Remove from the oven and let them cool slightly.

3. Cook the sausage
Heat a large skillet over medium heat.

Add the Italian sausage and cook for approximately 5–7 minutes, breaking it into small pieces with a wooden spoon.

Cook until the sausage is browned and completely cooked through.

Remove the sausage from the skillet and set aside.

4. Cook the mushrooms
Using the same skillet, add the chopped mushrooms.

Cook for 4–5 minutes, stirring occasionally.

Allow the mushrooms to release their moisture and continue cooking until most of the liquid has evaporated.

This is another important step for avoiding excess liquid in the finished casserole.

5. Add garlic and spinach
Add the minced garlic to the mushrooms.

Cook for about 30–60 seconds, just until fragrant.

Add the chopped spinach and cook for another 1–2 minutes, until wilted.

Remove the skillet from the heat.

If there is excess liquid in the pan, drain it before making the filling.

6. Make the ricotta filling
Place the cooked sausage, mushroom mixture and spinach into a large mixing bowl.

Add:

Ricotta
¼ cup Parmesan
Italian seasoning
Black pepper
Salt
Red pepper flakes, if using
Mix everything together until evenly combined.

Taste the filling and adjust the seasoning if necessary.

Because Italian sausage and Parmesan can already be salty, add additional salt carefully.

7. Prepare the baking dish
Spread approximately ¾ cup of marinara sauce evenly over the bottom of a 9 × 13-inch baking dish.

The sauce should cover the bottom but shouldn’t be excessively thick.

8. Make the zucchini rolls
Place one zucchini strip flat on a clean surface.

Add approximately 1–1½ tablespoons of the sausage-ricotta filling near one end.

Carefully roll the zucchini up tightly around the filling.

Place the roll seam-side down in the baking dish.

Continue with the remaining zucchini and filling.

Arrange the rolls close together so they don’t unravel during baking.

9. Add sauce and cheese
Spoon the remaining marinara sauce over the zucchini rolls.

Sprinkle the shredded mozzarella evenly over the top.

Finish with the remaining Parmesan.

For a prettier result, leave some of the zucchini edges visible instead of completely covering everything with cheese.

10. Bake
Cover the baking dish loosely with aluminum foil.

Bake at 400°F (200°C) for 20 minutes.

Remove the foil and continue baking for another 8–10 minutes, until:

The sauce is bubbling
The mozzarella is completely melted
The cheese is lightly golden
The filling is hot throughout
For an extra-browned top, broil for 1–2 minutes, watching closely so the cheese doesn’t burn.

11. Rest before serving
Remove the dish from the oven and allow it to rest for 5–10 minutes.

Garnish with fresh basil or parsley if desired.

Serve warm.

Common Questions (Q&A)
Q: Can I make these without sausage?
Yes. Simply leave out the sausage and increase the mushrooms and spinach. You can also add finely chopped bell pepper or extra zucchini.

Q: Can I use ground beef instead?
Yes. Use approximately 10–12 oz ground beef. Season it with Italian seasoning, garlic, black pepper and a little salt.

Q: Can I use ground turkey?
Yes. Ground turkey is a good leaner alternative to Italian sausage. You may want to add extra Italian seasoning and red pepper flakes for more flavor.

Q: Can I use cottage cheese instead of ricotta?
Yes. Blend the cottage cheese first if you prefer a smooth filling.

Q: Why are my zucchini rolls watery?
The most common reason is excess moisture in the zucchini. Salt the zucchini, let it sit, pat it very dry, and lightly pre-bake it. Also make sure the mushrooms are cooked until their liquid has evaporated.

Q: Can I prepare these ahead of time?
Yes. Assemble the entire dish, cover it tightly and refrigerate for up to 24 hours. Bake when ready, adding a few extra minutes if the dish is cold from the refrigerator.

Q: Can I freeze zucchini roll-ups?
Yes, although zucchini can become softer after freezing. For best results, freeze the assembled dish before baking and thaw it overnight in the refrigerator before baking.

Q: How long do leftovers last?
Store leftovers covered in the refrigerator for 3–4 days.

Q: Can I make this vegetarian?
Absolutely. Omit the sausage and use extra mushrooms, spinach and ricotta. Make sure your Parmesan is vegetarian if that is important to you.

Q: Can I make it low-carb?
Yes. This recipe is already relatively low in carbohydrates because zucchini replaces traditional lasagna noodles. Choose a marinara with no added sugar and check the carbohydrate content of your sausage.

Q: Can I use frozen spinach?
Yes. Thaw it completely and squeeze out as much water as possible before adding it to the filling.

Q: What is the best zucchini size?
Large, straight zucchini are easiest because they produce long, wide strips that are simple to roll.

Q: How do I keep the rolls from opening?
Place each roll seam-side down, pack the rolls fairly close together, and don’t overfill them.

Q: Can I make the zucchini strips without a mandoline?
Yes. A sharp chef’s knife or vegetable peeler works. The key is to make the strips thin and reasonably even.

Q: Can I make this spicier?
Yes. Use hot Italian sausage and add ¼–½ teaspoon red pepper flakes to the filling or sauce.

Q: What cheese gives the best result?
A combination of whole-milk ricotta + mozzarella + Parmesan gives the creamy filling, stretchy topping and salty, savory finish shown in the picture.

Q: How do I get the cheese extra golden?
After baking uncovered, place the dish under the broiler for 1–2 minutes. Watch it continuously because mozzarella can burn quickly.

Best result: The three most important things are thin zucchini slices, thoroughly removing excess moisture, and cooking the mushrooms/spinach until their liquid is gone. This gives you creamy, cheesy roll-ups rather than a watery casserole.
