Ingredients

  • 1 box (0.3 oz / 8.5 g) sugar-free strawberry Jell-O
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup cottage cheese, preferably 2% or 4%
  • 1½–2 cups sugar-free or regular whipped topping, such as Cool Whip
  • ½ cup plain or vanilla Greek yogurt — optional, for extra creaminess
  • ½–1 teaspoon vanilla extract — optional
  • ½ cup finely diced fresh strawberries — optional
  • Sweetener to taste, if desired

Instructions

  1. Dissolve the Jell-O
    • Put the strawberry gelatin powder into a large bowl.
    • Add 1 cup boiling water.
    • Whisk for about 1–2 minutes until completely dissolved.
  1. Add the cold water
    • Stir in 1 cup cold water.
    • Refrigerate for about 20–30 minutes, until the mixture is cool and beginning to thicken but is not completely set.
  1. Blend the cottage cheese
    • Add the cottage cheese to a blender or food processor.
    • Blend for 1–2 minutes until completely smooth.
    • This step is important if you want the very smooth, mousse-like texture seen in the photo.
  1. Combine
    • Add the cooled Jell-O mixture to the blended cottage cheese.
    • Blend briefly until smooth.
    • Mix in the Greek yogurt and vanilla if using.
  1. Fold in whipped topping
    • Transfer the mixture to a large bowl.
    • Gently fold in 1½–2 cups whipped topping.
    • Don’t overmix; folding keeps the mixture light and fluffy.
  1. Add strawberries
    • Fold in finely chopped strawberries if desired.
  1. Chill
    • Spoon into individual cups.
    • Refrigerate for at least 2–4 hours, preferably overnight.
    • The mixture will become noticeably thicker as it chills.
  1. Serve
    • Add a small swirl of whipped topping and a strawberry on top.
    • Keep refrigerated until serving.

For the exact thick consistency in the photo

Use 2 cups whipped topping + 1 cup cottage cheese and let it chill overnight. For an even thicker dessert, reduce the cold water from 1 cup to ¾ cup.

 Nut & Allergen Information

Naturally nut-free: The basic recipe contains no peanuts or tree nuts.

However, check the labels of:

  • Jell-O/gelatin
  • Whipped topping
  • Greek yogurt
  • Any toppings or flavored ingredients

Manufacturers can change formulations and allergen statements.

Contains:

  • Milk/dairy, from cottage cheese, yogurt, and/or whipped topping.
  • Gelatin if using conventional Jell-O, so it is generally not vegetarian or vegan.

Gluten: The ingredients are generally gluten-free, but check the individual packages for current labeling and cross-contact warnings.

Approximate nutrition

This varies considerably according to the brands and amounts used. Using sugar-free gelatin, 2% cottage cheese, nonfat Greek yogurt, and sugar-free whipped topping, one ½-cup serving will generally be around:

  • Calories: 70–100
  • Protein: 5–8 g
  • Carbohydrates: 4–8 g
  • Fat: 2–4 g
  • Sugar: 2–5 g
  • Added sugar: 0 g when using sugar-free products

The Jell-O being sugar-free doesn’t automatically make the finished dessert calorie-free or carb-free, because cottage cheese, yogurt, fruit, and whipped topping contribute calories and carbohydrates.

Common Questions

Can I make it without cottage cheese?
Yes. Substitute about 1 cup Greek yogurt or softened cream cheese. Cottage cheese gives the recipe more protein and, when blended, produces a particularly smooth mousse.

Can I use fresh strawberries?
Yes. Dice them very small and fold them in after the mixture is prepared. Don’t replace the gelatin powder with fresh strawberries because the gelatin is what gives the dessert its structure.

Can I use regular Jell-O?
Yes. Use the same amount of strawberry gelatin. The main difference will be the sugar and calorie content.

Can I use other flavors?
Definitely. Try raspberry, cherry, orange, lemon, lime, peach, or mixed berry.

Why did mine turn watery?
Usually it’s because the Jell-O was still too warm when the whipped topping was added, too much liquid was used, or the dessert wasn’t chilled long enough. Cool the gelatin mixture until it is beginning to thicken before combining everything.

Can I freeze it?
You can, but the texture may become icy or separate after thawing. Refrigeration gives the best mousse/fluff consistency.

How long does it last?
Keep it covered and refrigerated and use it within about 3–4 days. If using fresh strawberries, the texture is generally best within the first couple of days.

Can I make individual cups like the picture?
Yes. Divide the mixture among 6–8 small clear cups, cover, and refrigerate. For the pictured presentation, pipe a small mound of the mixture or whipped topping in the center before chilling.
