For the dressing

2 tbsp fresh lemon or lime juice
1 tbsp tamarind paste
1 tbsp olive oil
1–2 tsp honey or jaggery
1 tsp chaat masala
½ tsp roasted cumin powder
¼ tsp Kashmiri chili powder
¼ tsp black salt/kala namak
¼ tsp regular salt, or to taste
1–2 tbsp water, as needed

For serving

Toasted sourdough, baguette or flatbread
Extra cilantro and mint
Extra chili
Pomegranate seeds
A drizzle of tamarind chutney, optional
Method
Prepare the chickpeas.
Drain and rinse canned chickpeas thoroughly. Pat them reasonably dry so the salad doesn’t become watery. If using dried chickpeas, soak overnight and boil until tender.
Make the dressing.
Whisk together lemon juice, tamarind paste, olive oil, jaggery/honey, chaat masala, cumin, chili powder and both salts. Add a little water if it’s too thick.
Chop everything finely.
The tiny pieces of vegetables are important—they allow every spoonful to contain chickpeas, herbs, vegetables and dressing.
Build the chaat.
Add chickpeas, tomato, cucumber, onion, peppers, chilies, cilantro, mint and garlic to a large bowl.
Dress and toss.
Pour the dressing over the mixture and gently toss. Taste and adjust:
more lemon → sharper
more tamarind → deeper sweet-sour flavor
more chaat masala → saltier/spicier
jaggery → sweeter
chili → hotter
Rest for 10–15 minutes.
This gives the chickpeas time to absorb the dressing and is typical of the flavor-building approach used in chana chaat.
Toast the bread.
Brush a slice of sourdough or baguette with a little olive oil and toast until golden and crisp.
Pile it high.
Spoon the chickpea mixture generously over the toast. Finish with cilantro, mint, pomegranate and a little tamarind chutney.

For an especially chunky, juicy version like the picture, don’t mash the chickpeas. Keep most whole, but lightly crush about ¼ cup with the back of a spoon. This helps the dressing cling to the mixture while retaining plenty of whole chickpeas.
