 Ingredients

  • 1 lb (450g) ground beef
  • 3 cups butternut squash, peeled and cubed
  • 1 medium zucchini, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • ¼ cup fresh parsley, chopped

 Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add the cubed butternut squash and cook for 8–10 minutes, stirring occasionally, until tender and lightly golden. Remove and set aside.
  3. Add the remaining olive oil, ground beef, and onion to the skillet. Cook until the beef is browned.
  4. Add garlic, paprika, cumin, oregano, salt, and black pepper. Stir well.
  5. Add the chopped zucchini and cook for 4–5 minutes until slightly tender.
  6. Return the cooked butternut squash to the skillet.
  7. Mix everything gently and cook for another 2–3 minutes.
  8. Sprinkle with fresh parsley and serve warm.
