Cheesy Vegetable & Egg Bake

Ingredients

Serves: 6–8

  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • ½ cup cheddar cheese, shredded
  • 1 medium onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 1 medium tomato, diced
  • 1 small zucchini, grated and squeezed dry
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ¼ tsp chili flakes, optional
  • 2 tbsp fresh parsley, chopped

 Instructions

  1. Preheat oven: Set oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with a little olive oil.
  3. Heat olive oil in a pan. Sauté onion and bell pepper for 3–4 minutes.
  4. Add garlic, spinach, tomato and zucchini. Cook another 2–3 minutes until the vegetables soften and excess moisture evaporates.
  5. In a large bowl, whisk together the eggs, milk, salt, pepper, paprika and oregano.
  6. Stir the cooked vegetables into the egg mixture.
  7. Pour everything into the prepared baking dish.
  8. Sprinkle mozzarella and cheddar evenly over the top.
  9. Bake for 30–40 minutes, until the center is set and the top is golden and bubbling.
  10. Rest for 5–10 minutes, then garnish with fresh parsley and slice.
