- 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 3–4 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ¼ tsp red chili flakes (optional)
- ½ cup chicken broth
- 2 tbsp lemon juice
- ¼ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
For the Garlic Parmesan Rice
- 1 cup long-grain white rice
- 2 cups chicken broth or water
- 1 tbsp butter
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- Salt and black pepper, to taste
 Instructions
1. Cook the Rice
Rinse the rice until the water runs mostly clear. Add rice and chicken broth to a saucepan and bring to a boil. Reduce the heat, cover, and cook for about 15–18 minutes, or until tender. Let it rest for 5 minutes.
Stir in butter, minced garlic, Parmesan cheese, salt, and black pepper. Fluff with a fork and keep warm.
2. Season the Chicken
Season the chicken pieces with salt, black pepper, paprika, and chili flakes.
3. Cook the Chicken
Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 6–8 minutes, turning occasionally, until golden brown and fully cooked.
4. Make the Scampi Sauce
Add the minced garlic and cook for about 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping up the flavorful browned bits from the pan.
Reduce the heat and stir in Parmesan cheese. Cook for another 1–2 minutes until lightly saucy.
5. Finish & Serve
Stir in fresh parsley. Spoon the warm garlic Parmesan rice onto plates and top generously with the golden chicken scampi. Serve immediately with extra Parmesan if desired.
