 Ingredients

For the Zucchini

  • 4 medium zucchini, sliced into rounds or half-moons
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika, optional

For the Saucy Layer

  • 2 cups marinara or tomato pasta sauce
  • 1 tablespoon tomato paste, optional for a richer sauce
  • ½ teaspoon red pepper flakes, optional

For the Cheesy Topping

  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh basil or parsley

 Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

2. Cook the Zucchini

Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook for 2–3 minutes until softened.

Add the garlic and cook for another 30 seconds.

Add the zucchini, salt, pepper, Italian seasoning, and paprika. Cook for 5–7 minutes, stirring occasionally, until the zucchini begins to soften.

3. Add the Sauce

Pour in the marinara sauce and tomato paste. Add red pepper flakes if you like a little heat.

Stir everything together and simmer for 3–5 minutes.

4. Assemble the Casserole

Transfer half of the zucchini mixture to the prepared baking dish.

Sprinkle with half of the mozzarella, cheddar, and Parmesan.

Add the remaining zucchini mixture and top with the remaining cheeses.

5. Bake Until Bubbly

Bake uncovered for 20–25 minutes, until the cheese is melted, golden, and bubbling around the edges.

For an extra golden top, broil for 1–2 minutes, watching carefully.

6. Garnish and Serve

Remove from the oven and let the casserole rest for 5 minutes. Sprinkle with fresh basil or parsley before serving.
