The picture appears to show savory baked egg muffins/omelet cups with egg, cheese, red pepper, herbs and small vegetable pieces. They are soft and fluffy inside with a lightly golden top. A 12-cup muffin pan is ideal, and similar tested recipes use about 175–190°C (350–375°F) and roughly 18–25 minutes of baking.

Ingredients — makes 12 muffins
Egg mixture
6 large eggs

½ cup milk — 120 ml

½ tsp salt

¼ tsp black pepper

½ tsp garlic powder

½ tsp paprika

½ tsp dried mixed herbs or oregano

Vegetables
½ cup red bell pepper, very finely diced

¼ cup onion, finely diced

¼ cup carrot, finely diced

¼ cup spinach, finely chopped

2 tbsp fresh coriander/cilantro or parsley, chopped

2 tbsp spring onion, finely sliced

¼ cup tomato, finely diced and seeds removed

Cheese
¾ cup shredded cheddar or mozzarella

2 tbsp extra cheese for the tops

Optional — for the version shown
¼ cup finely diced cooked chicken, turkey or sausage

1 small green chili, finely chopped

½ tsp chili flakes

Important: Keep watery vegetables such as tomato, zucchini and mushrooms relatively dry. Excess moisture can make egg muffins watery. Cooking high-moisture vegetables first is a commonly recommended technique.

Step-by-step method
1. Prepare the oven
Preheat your oven to 180°C / 350°F.

Grease a 12-hole muffin pan generously with oil or cooking spray. Paper liners can also be used, although eggs can sometimes stick to ordinary paper liners.

2. Prepare the vegetables
Cut everything into very small pieces.

If using tomato, remove the seeds and excess juice.

For an especially good texture, sauté the onion, bell pepper and carrot in 1 teaspoon oil for 2–3 minutes. Add spinach for the final 30 seconds.

Remove from the heat and allow the vegetables to cool slightly.

3. Make the egg mixture
Crack the eggs into a large bowl.

Add:

milk

salt

black pepper

garlic powder

paprika

oregano/mixed herbs

Whisk until completely combined.

Don’t whip excessively; too much foam isn’t necessary.

4. Add cheese and vegetables
Add about ½ cup cheese to the egg mixture.

Add the cooled vegetables, spring onion and fresh herbs.

Mix gently.

5. Fill the muffin pan
Divide the mixture between the 12 cups.

Fill each cup approximately ⅔–¾ full. Don’t fill to the rim because the eggs puff during baking.

Sprinkle the remaining cheese over each muffin.

6. Bake
Place the pan in the preheated oven.

Bake at 180°C / 350°F for approximately 18–22 minutes.

They’re ready when:

the tops are lightly golden,

the centers are set,

there is no liquid egg in the middle.

Some ovens may require closer to 25 minutes. Similar egg-muffin recipes use 18–22 minutes at 175–190°C.

For food safety, the egg should reach approximately 74°C / 165°F in the center.

7. Rest
Remove from the oven and let them sit in the pan for 5 minutes.

Run a small knife or silicone spatula around the edges and gently lift them out.

Serve warm.

How to get the muffins like the photograph
For the golden, tall bakery-style appearance:

Use full-fat cheese.

Don’t add too much milk.

Chop vegetables very finely.

Remove excess moisture from tomatoes.

Sauté watery vegetables first.

Fill cups only ⅔–¾ full.

Put a little cheese on top.

Bake immediately after mixing.

Don’t overbake—the center should be just set.

The muffins naturally puff in the oven and then shrink slightly as they cool. That’s normal.

Pakistani-style spicy variation
For a more flavorful version, use:

6 eggs

½ cup milk

½ cup cheddar/mozzarella

½ cup capsicum

¼ cup onion

¼ cup carrot

¼ cup tomato

1 green chili

2 tbsp coriander

½ tsp red chili flakes

½ tsp black pepper

½ tsp garlic powder

½ tsp paprika

½ tsp cumin powder

½ tsp salt

You can also add cooked chicken or chicken sausage.

version
Add ½ cup cooked, finely chopped chicken.

The chicken must already be cooked before adding it to the egg mixture. Don’t put raw chicken into the muffins.

Good combination:

chicken + capsicum + onion + cheddar + coriander + green chili.

Vegetable version
For a meat-free version, use:

spinach

broccoli

capsicum

carrot

onion

mushrooms

cheddar/mozzarella

Cook mushrooms and other particularly watery vegetables first so the muffins don’t become wet.

Can I use cream instead of milk?
Yes.

For richer, softer muffins:

¼ cup cream + ¼ cup milk

For a lighter version:

½ cup milk

You can also use unsweetened non-dairy milk. Egg-muffin recipes commonly use either milk or other dairy/non-dairy liquids.

Which cheese is best?
Cheese Result
Cheddar Strong, savory flavor
Mozzarella Stretchy and mild
Cheddar + mozzarella Excellent balance
Feta Salty, Mediterranean flavor
Monterey Jack Very creamy
Processed cheese Very soft and rich

For the pictured style, I’d use ½ cup mozzarella + ¼ cup cheddar.

Q&A / Troubleshooting
Why did my egg muffins become watery?
Usually because the vegetables contained too much water. Tomatoes, zucchini, mushrooms and spinach can release considerable moisture. Cook or drain them before adding.
S

Why did they stick to the pan?
Grease the pan thoroughly before filling. A silicone muffin mold can make removal easier.

Why did my muffins collapse?
Egg muffins naturally rise during baking and settle somewhat afterward. Excessive liquid and overfilling can also contribute to poor structure.

Can I make them without cheese?
Yes. Simply omit the cheese. They’ll still work, although cheese adds flavor and richness.

Can I make them without milk?
Yes. Replace the milk with an equal amount of water, or simply use a little less liquid. A number of egg-muffin recipes use milk or water in the egg base.

Can I add potatoes?
Yes, but use cooked potatoes and cut them into very small cubes. Don’t add raw potato because it may remain undercooked.

Can I add bacon?
Yes. Cook it first, drain excess fat, chop it and add approximately ½ cup.

Can I add sausage?
Yes—fully cook the sausage first, then crumble it into the mixture.

Can children eat these?
Yes, provided the eggs and any meat are thoroughly cooked and the muffins are cooled to a safe eating temperature.

Storage
Allow the muffins to cool before storing.

Refrigerator
Keep in an airtight container in the refrigerator and use within about 3–4 days.
C
Christoph and Steffi’s Food and Travel

Place a paper towel underneath them to absorb condensation.

Freezer
Freeze individually, then transfer to a freezer bag/container.

They can be kept frozen for roughly 2–3 months depending on the storage conditions and recipe.

Reheating
From refrigerator:

Microwave: approximately 20–40 seconds per muffin.

From frozen:

Microwave: approximately 60–90 seconds, checking the center and adding time as necessary.

Or thaw overnight in the refrigerator and reheat in a 160°C oven for about 8–10 minutes.

Serving ideas
Serve these with:

ketchup

green chutney

mint yogurt

hot sauce

salsa

avocado

toast

fresh salad

chai or coffee

They’re particularly useful for breakfast, lunch boxes, picnics and meal prep.

Approximate nutrition
Nutrition varies substantially depending on the cheese, milk and fillings. As a reference, a simple egg-and-vegetable muffin can be around 100–140 calories and 9–10 g protein per serving, but adding cheese, meat or cream increases the calories.

Best basic formula:
6 eggs + ½ cup milk + ¾ cup cheese + about 1½ cups finely chopped/cooked vegetables → 12 muffins.

This gives you a reliable base that you can customize with chicken, sausage, spinach, capsicum, mushrooms, herbs or different cheeses.
