Ingredients
Muffins
1 box sugar-free yellow cake mix — approximately 15–16 oz / 425–454 g
1 can 100% pure pumpkin puree — 15 oz / 425 g
1–1½ tsp pumpkin pie spice
1 tsp vanilla extract — optional
¼ tsp salt — optional
Important
Do NOT use pumpkin pie filling. Use plain 100% pumpkin puree, like the can shown in your picture. Similar two-ingredient pumpkin muffin recipes specifically use cake mix and pure pumpkin without adding water, oil, or eggs.

Full Instructions
1. Prepare the oven
Preheat oven to:

350°F / 175°C

Line a muffin pan with paper cupcake liners.

You can lightly spray the liners with nonstick spray if desired.

2. Mix the batter
Put the entire box of dry sugar-free yellow cake mix into a large bowl.

Add:

1 × 15-oz can pumpkin puree

Add the pumpkin pie spice.

Mix with a sturdy spoon or electric mixer until everything is combined.

Don’t add:
eggs
oil
milk
water

The pumpkin supplies the moisture needed for this simplified recipe.

The batter will be very thick. That’s normal.

3. Fill the muffin cups
Spoon batter into the liners.

Fill each approximately ¾ full.

For larger bakery-style muffins, you can fill them slightly higher.

4. Bake
Bake at:

350°F / 175°C for approximately 18–24 minutes.

Start checking at 18 minutes.

Insert a toothpick into the center.

If it comes out with:

a few moist crumbs → done
wet batter → bake another 2–3 minutes
Don’t overbake or they can become dry.

5. Cool
Leave muffins in the pan for approximately 5 minutes.

Then transfer them to a cooling rack.

Allow them to cool completely before adding frosting/topping.

Optional Pumpkin-Spice Version
For stronger fall flavor, use:

1½ tsp pumpkin pie spice
½ tsp cinnamon
¼ tsp nutmeg
⅛ tsp ground cloves
Mix these directly into the cake mix before adding pumpkin.

Sugar-Free Jell-O Topping
