Roasted Butternut Squash with Cranberries, Feta & Walnuts

 Ingredients

For the squash

  • 2½ lb (1.1 kg) butternut squash, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp maple syrup or honey
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

Toppings

  • ¾ cup dried cranberries
  • ¾ cup crumbled feta cheese
  • ½ cup chopped walnuts
  • 1–2 fresh rosemary sprigs
  • 2 tbsp fresh parsley, chopped

Optional finishing drizzle

  • 1 tbsp balsamic glaze
  • 1 tsp maple syrup

 Instructions

  1. Heat oven to 425°F (220°C).
  2. Peel and cube the butternut squash into roughly equal pieces.
  3. Add squash to a large bowl. Toss with olive oil, maple syrup, thyme, garlic powder, salt, pepper, and paprika.
  4. Spread in a single layer on a large baking sheet. Avoid overcrowding so the squash roasts instead of steaming.
  5. Roast for 30–35 minutes, turning once halfway through, until tender and caramelized around the edges.
  6. During the final 5 minutes, scatter the dried cranberries over the squash to warm them slightly.
  7. Transfer to a serving dish.
  8. Sprinkle generously with feta and chopped walnuts.
  9. Garnish with fresh rosemary and parsley.
  10. Drizzle with balsamic glaze and a little maple syrup if desired. Serve warm.

Cube squash → toss with oil, maple syrup & seasonings → roast at 425°F for 30–35 min → add cranberries → top with feta + walnuts + rosemary → drizzle with balsamic glaze → serve warm.
