 Ingredients

  • 1 medium zucchini, thinly sliced
  • 2 medium tomatoes, sliced
  • 6 large eggs
  • ½ cup shredded mozzarella or cheddar
  • 2 tbsp olive oil
  • 2 tbsp finely chopped onion
  • 1 clove garlic, minced
  • 2 tbsp fresh parsley or basil, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Italian seasoning
  • ¼ tsp paprika
  • Optional: 2 tbsp grated Parmesan

 Instructions

  1. Preheat oven: Heat to 375°F (190°C).
  2. Prepare vegetables: Slice the zucchini and tomatoes. Pat the tomatoes lightly with paper towel to remove excess moisture.
  3. Cook zucchini: Heat olive oil in an oven-safe skillet over medium heat. Add onion and zucchini. Cook for 4–5 minutes until slightly softened.
  4. Add garlic and cook for 30 seconds.
  5. Make egg mixture: Whisk eggs, salt, pepper, Italian seasoning, paprika, and half of the cheese.
  6. Pour the egg mixture over the zucchini. Gently arrange tomato slices on top.
  7. Sprinkle with the remaining cheese and Parmesan if using.
  8. Bake: Transfer the skillet to the oven and bake for 15–20 minutes, until the center is set and the top is lightly golden.
  9. Let it rest for 5 minutes, then slice and garnish with fresh parsley or basil.
