1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
For the Alfredo Sauce
2 tablespoons butter
8 ounces mushrooms, sliced
4 cloves garlic, minced
2 cups heavy cream
1 cup freshly grated Parmesan cheese
½ cup mozzarella cheese (optional, for extra creaminess)
½ teaspoon Italian seasoning
¼ teaspoon onion powder
Salt and black pepper to taste
Pasta
12 ounces fettuccine (or penne, linguine, or spaghetti)
Water for boiling
1 tablespoon salt (for pasta water)
Garnish
Fresh parsley, chopped
Extra Parmesan cheese
Fresh cracked black pepper
Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook pasta according to package directions until al dente.
Reserve ½ cup pasta water.
Drain and set aside.
Step 2: Season the Chicken

Mix together:

Italian seasoning
Garlic powder
Paprika
Salt
Pepper

Coat the chicken evenly.

Step 3: Cook the Chicken
Heat olive oil and butter in a large skillet over medium-high heat.
Cook chicken for 4–5 minutes per side until golden and cooked through (internal temperature 165°F/74°C).
Remove from skillet and keep warm.
Step 4: Cook the Mushrooms

Using the same skillet:

Melt 2 tablespoons butter.
Add mushrooms.
Cook for 5–7 minutes until browned.
Stir in garlic and cook for 1 minute.
Step 5: Make the Alfredo Sauce
Pour in heavy cream.
Simmer for 3–4 minutes (do not boil).
Stir in Parmesan cheese until melted.
Add mozzarella (if using).
Season with Italian seasoning, onion powder, salt, and pepper.
Stir until smooth and creamy.
Step 6: Combine
Add cooked pasta to the sauce.
Toss until coated.
Add reserved pasta water if needed to thin the sauce.
Return chicken to the skillet.
Toss gently to combine.
Step 7: Serve

Top with:

Fresh parsley
Extra Parmesan
Black pepper

Serve immediately while hot.

Tips for Success
Freshly grated Parmesan melts much better than pre-shredded cheese.
Brown the mushrooms well for deeper flavor.
Don’t let the cream boil, or the sauce may separate.
Save pasta water—it helps create a silky sauce.
Slice chicken evenly so it cooks uniformly.
Variations
Add spinach for extra greens.
Mix in steamed broccoli.
Use shrimp instead of chicken.
Add crispy bacon pieces.
Stir in sun-dried tomatoes.
Use gluten-free pasta if needed.
Storage

Refrigerator:

Store in an airtight container for up to 3 days.

Freezer:

Not recommended, as cream sauces can separate after thawing.
Reheating
Reheat gently on the stovetop over low heat.
Add a splash of milk or cream to restore the creamy texture.
Microwave in 30-second intervals, stirring between each.

Frequently Asked Questions (Q&S)

Q: Can I use chicken thighs instead of breasts?
A: Yes. Boneless, skinless chicken thighs are juicier and work just as well.

Q: Can I make Alfredo sauce without heavy cream?
A: Yes. You can substitute half-and-half or whole milk, though the sauce will be lighter and less rich.

Q: Why is my Alfredo sauce grainy?
A: Use freshly grated Parmesan and melt it over low heat. High heat can cause the cheese to become grainy.

Q: Can I make this dish ahead of time?
A: Yes. Prepare it up to one day in advance and reheat gently with a little milk or cream.

Q: What mushrooms work best?
A: White button mushrooms, cremini (baby bella), or a mix of wild mushrooms all work well.

Q: Can I add vegetables?
A: Absolutely. Broccoli, spinach, peas, asparagus, or roasted red peppers are excellent additions.

Q: Can I use pre-cooked chicken?
A: Yes. Rotisserie chicken is a convenient option—simply add it to the sauce to warm through.

Q: Is this recipe gluten-free?
A: Not as written, but you can use gluten-free pasta to make it gluten-free.

Q: Can I make it low-carb?
A: Yes. Serve the Alfredo sauce over zucchini noodles, spaghetti squash, or cauliflower instead of pasta.

Q: What pairs well with Creamy Chicken Mushroom Alfredo?
A: Garlic bread, Caesar salad, steamed green beans, roasted asparagus, or a fresh garden salad make excellent side dishes.
