Ingredients:
For the Beef Filling:
1 lb (450 g) ground beef
1 tablespoon olive oil
1 small onion, finely chopped
1 small red bell pepper, diced
1 small green bell pepper, diced
3 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon Italian seasoning
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes, optional
2 tablespoons tomato paste
2 tablespoons water
For the Quesadilla Wraps:
6 large flour tortillas
1½ cups (150 g) shredded cheddar cheese
1 cup (100 g) shredded mozzarella cheese
½ cup (50 g) shredded Monterey Jack cheese
2 tablespoons butter or olive oil, for cooking
2 tablespoons fresh cilantro or parsley, chopped
For the Creamy Sauce:
½ cup mayonnaise
½ cup sour cream
2 tablespoons cream cheese, softened
1 tablespoon lemon or lime juice
1 clove garlic, finely minced
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon black pepper
¼ teaspoon salt
1 tablespoon chopped fresh parsley or cilantro
1–2 tablespoons water, if needed for thinning
Optional toppings:
Diced tomatoes
Shredded lettuce
Sliced jalapeños
Sliced avocado
Pickled onions
Fresh cilantro
Sour cream
Instructions:
Prepare the creamy sauce:
Add mayonnaise, sour cream, softened cream cheese, lemon or lime juice, minced garlic, paprika, garlic powder, onion powder, black pepper, salt, and fresh herbs to a bowl.
Whisk until smooth and creamy. If the sauce is too thick, add 1–2 tablespoons of water until you reach your preferred consistency. Cover and refrigerate while preparing the quesadillas.
Cook the beef:
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chopped onion and bell peppers. Cook for 3–4 minutes until they begin to soften.
Add the garlic:
Add the minced garlic and cook for about 30 seconds, stirring constantly.
Brown the beef:
Add the ground beef to the skillet. Break it apart with a wooden spoon and cook for 6–8 minutes until completely browned.
Drain excess grease if necessary.
Season the beef:
Add chili powder, paprika, cumin, Italian seasoning, onion powder, garlic powder, salt, black pepper, and red pepper flakes.
Stir well and cook for 1–2 minutes so the spices become fragrant.
Add tomato paste:
Stir in the tomato paste and 2 tablespoons water. Cook for another 2–3 minutes until the beef mixture becomes flavorful and slightly saucy.
Remove from heat and allow the filling to cool for a few minutes.
Assemble the wraps:
Place one tortilla on a clean surface. Sprinkle about ¼ cup cheddar, 2 tablespoons mozzarella, and a little Monterey Jack over one half of the tortilla.
Add a generous portion of the seasoned beef mixture. Do not overfill because the tortilla may break when folded.
Add another small layer of cheese over the beef and sprinkle with fresh cilantro or parsley.
Fold:
Fold the empty half of the tortilla over the filling to create a half-moon quesadilla. Gently press down to hold everything together.
Repeat with the remaining tortillas and filling.
Cook the quesadillas:
Heat a large nonstick skillet over medium heat. Lightly brush the skillet with butter or olive oil.
Place the quesadilla in the skillet and cook for 2–3 minutes until the bottom is golden brown and crispy.
Flip carefully:
Using a wide spatula, carefully flip the quesadilla. Cook the other side for another 2–3 minutes until golden brown and the cheese has completely melted.
Repeat with the remaining quesadillas, adding a little more butter or oil as needed.
Make them extra crispy:
For an especially crispy exterior, cook each side for an additional 30–60 seconds over medium-low heat. Avoid using very high heat because the tortilla can burn before the cheese melts.
Slice and serve:
Transfer the quesadillas to a cutting board and let them rest for 1–2 minutes. Slice each into 2–3 pieces.
Serve immediately with the chilled creamy sauce and your favorite toppings.

Tips:
Use 80–90% lean ground beef for a flavorful filling without excessive grease.
Let the beef filling cool slightly before assembling the quesadillas. Very hot filling can make the tortillas soggy.
Do not overfill the tortillas. A moderate amount of filling allows the cheese to melt properly and makes flipping much easier.
Use a combination of cheddar and mozzarella for a flavorful filling with excellent cheese stretch.
Cook over medium heat rather than high heat so the tortilla becomes crispy while the cheese melts completely.
For a spicy version, add jalapeños, extra red pepper flakes, or a little hot sauce to the beef mixture.
For a lower-carb option, use low-carb tortillas.
Storage:
Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days. Store the creamy sauce separately.
Reheating:
Reheat in an air fryer at 375°F (190°C) for 3–5 minutes or in a skillet over medium-low heat until hot and crispy. Avoid microwaving if you want to maintain the crispy tortilla.
Freezing:
Assembled quesadillas can be frozen before cooking for up to 2 months. Wrap individually and place in a freezer-safe bag. Cook from frozen in a skillet or air fryer, adding a few extra minutes to the cooking time.
