Colorful roasted vegetables layered with earthy beets, sweet potatoes, carrots, potatoes, and onion, finished with creamy feta, crunchy walnuts, and fresh herbs.
Ingredients
- 2 medium beets, peeled and thinly sliced
- 2 medium sweet potatoes, peeled and thinly sliced
- 2 medium Yukon Gold potatoes, thinly sliced
- 2 large carrots, thinly sliced
- 1 medium yellow onion, thinly sliced
- 3 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup crumbled feta cheese
- ½ cup walnuts, roughly chopped
- 1 tbsp fresh thyme or parsley
- 1 tbsp balsamic vinegar, optional
Instructions
- Preheat the oven: Heat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with olive oil.
- Prepare the vegetables: Peel and thinly slice the beets, sweet potatoes, potatoes, carrots, and onion. Try to keep the slices similar in thickness so they cook evenly.
- Season: Place the vegetables in a large bowl. Add olive oil, thyme, rosemary, garlic powder, salt, and black pepper. Toss until evenly coated.
- Arrange: Arrange the vegetable slices upright or slightly overlapping in rows inside the baking dish, alternating the different vegetables for a colorful presentation.
- Cover and bake: Cover the dish tightly with foil and bake for 35–40 minutes.
- Uncover: Remove the foil and continue baking for 20–25 minutes, until the vegetables are tender and the edges are lightly caramelized.
- Add feta and walnuts: Sprinkle the crumbled feta and walnuts over the vegetables. Return to the oven for 5–8 minutes, just until the feta is warmed and the walnuts are lightly toasted.
- Finish: Sprinkle with fresh thyme or parsley. Drizzle with a little balsamic vinegar if desired.
- Serve: Let rest for about 5 minutes, then serve warm as a side dish or light vegetarian meal.
